- Cut the baguette lengthwise. Slightly hollow out the bread halves. Drizzle the lower half of the bread with mayonnaise and top with lettuce leaves.
- Peel the onions and cut into rings. Cut the tomato and cucumber into slices. Distribute the vegetables onto the bread and sprinkle with mayonnaise.
- Cut the gorgonzola into small pieces. Top the bread with the cheese, ham, salami and green olives, and cover with the other half of the bread.

- Split the baguette open and lightly brush with oil, then season lightly with salt and pepper. Thinly slice the roasted pepper. Layer on the prosciutto, provolone, basil, red pepper, balsamic glaze and salami. Top with the top half of the baguette. (Layering the meat on the bottom and top of the sandwich prevents the fillings from soaking through and making the bread soggy.)
- Put a bowl or other heavy object (such as a large can or jar) on the sandwich to press it for 1 hour before serving. Or, pack it in the bottom of your lunchbox, under a glass container or drink.

- Meanwhile, stir the cheese and sour cream in a small bowl to form a thick spread. Season the cheese mixture, to taste, with salt and pepper. Remove some of the bread from the center of the baguette halves. Spread the cheese mixture over the baguette halves. Arrange the arugula then the warm steak slices over the baguette bottom.
