Indian Wedding Cake | Just A Pinch Recipes image

This is a recipe my Mom got from a lady at a Square dance party. Her and Dad loved to Square Dance, they even took a boat cruise just for dancers. Those were the days. This is in memory of my Mother, she loved to cook and laugh.

Number Of Ingredients 11

2 cup(s) flour - plain
2 cup(s) sugar
2 - eggs, beaten
2 teaspoon(s) baking soda
1 teaspoon(s) salt
1 teaspoon(s) vanilla
2 can(s) 8 oz. canned crushed pineapples, juice and all
FROSTING
1 cup(s) powder sugar
1 stick(s) butter, unsalted, soften
1 - 8 oz. creams cheese, soften

Steps:

  • mix all cake ingredients together.
  • Put into a greased and floured 9x13 pan
  • bake at 350 degress for 30 to 35 minutes
  • Cool cake and split in half. put frosting in between layers and on top. Don't frost the sides.
  • Frosting: Beat soften butter and cream cheese together, blend in powder sugar.
