Finding the best Salisbury steak recipe is hard! I remember enjoying it often when I was growing up, but when I decided to add it to my recipe collection, I wasn't able to find it in my modern cookbooks. Ingredients

1 large egg
3 tablespoons crushed butter-flavored crackers
1 tablespoon finely chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon rubbed sage
3/4 pound ground beef
1 can (4 ounces) mushroom stems and pieces, drained
2 tablespoons butter
3 tablespoons all-purpose flour
1-3/4 cups water
2 beef bouillon cubes
1/4 teaspoon browning sauce, optional
Hot mashed potatoes
Minced fresh parsley, optional

Steps:

In a medium bowl, combine egg, cracker crumbs, onion, salt, pepper and sage. Add beef and mix well. Shape into 2 patties. , In a medium skillet, cook patties until browned, 4-5 minutes per side; drain. Remove to a platter and keep warm. , In the same skillet, saute mushrooms in butter for 2 minutes. Stir in flour; blend well. Add water and bouillon; cook and stir until smooth and thickened. Stir in browning sauce if desired. Return patties to gravy and cook, uncovered, over low heat until heated through, about 10 minutes, turning occasionally. Serve with mashed potatoes. If desired, sprinkle with parsley.

Ingredients

2 pounds lean ground beef
1 (1 ounce) envelope dry onion soup mix
½ cup Italian seasoned bread crumbs
¼ cup milk
¼ cup all-purpose flour
2 tablespoons vegetable oil
2 (10.75 ounce) cans condensed cream of chicken soup
1 (1 ounce) packet dry au jus mix
¾ cup water

Steps:

In a large bowl, mix together the ground beef, onion soup mix, bread crumbs, and milk using your hands. Shape into 8 patties.
Heat the oil in a large skillet over medium-high heat. Dredge the patties in flour just to coat, and quickly brown on both sides in the hot skillet. Place browned patties into the slow cooker stacking alternately like a pyramid. In a medium bowl, mix together the cream of chicken soup, au jus mix, and water. Pour over the meat. Cook on the Low setting for 4 or 5 hours, until ground beef is well done.

Heat a griddle over medium-high to high heat. Divide beef in half and roll into rough balls. One at a time, place the beef on the griddle. Place a large (non-slotted) spatula on top and use a coffee mug or large measuring cup to push the spatula and smash the patty very flat. Repeat with the other patty. Sprinkle them both with salt. Cook them for 1 to 2 minutes, or until they're nice and brown on the first side. Flip them over, wait 45 seconds, the place the slice of cheese on one of the patties. Place the other patty on top of the cheese, give it 15 to 20 seconds to melt, then place directly on the bun. Serve with ketchup, pickles, mustard, mayo, jalapeño slices, etc.
