Apple Quinoa Bowl With Cinnamon Ricotta Recipe | Cooking Light image

Make this bowl with a batch of our Perfect Quinoa. It captures the essence of a warm slice of apple pie but won’t send you into midmorning nap mode. Feel free to swap the ricotta for Greek yogurt, if desired.

Yield Serves 4 (serving size: about 1 3/4 cups)

Number Of Ingredients 8

2 teaspoons unsalted butter
10 ounces chopped Granny Smith apples (from 2 medium apples)
1/4 teaspoon kosher salt
2 teaspoons honey
1 cup part-skim ricotta cheese
1/4 teaspoon ground cinnamon
2 2/3 cups Perfect Quinoa
1/4 cup chopped toasted hazelnuts

Steps:

  • Heat butter in a large nonstick skillet over medium-high. Add apples and salt; cook, stirring occasionally, until apples begin to soften, 8 to 10 minutes. Add honey, and cook, stirring constantly, until apples are tender, 1 to 2 more minutes. Remove skillet from heat. Stir together ricotta and cinnamon in a small bowl. Divide quinoa evenly among 4 bowls. Top each serving with 1/4 cup ricotta mixture and 1/2 cup apples. Top evenly with hazelnuts.

Easy one bowl cake recipe and great way to use extra apples.

Number Of Ingredients 7

2 - eggs
1 3/4 cup(s) sugar
2 teaspoon(s) cinnamon
1/2 cup(s) oil
6 medium gala or fuji or honey crisp apples
2 cup(s) flour
2 teaspoon(s) baking soda

Steps:

  • Preheat oven to 350°. In a large bowl, mix the eggs, sugar, cinnamon and oil. Peel and slice the apples and add to mixture in bowl (coating as you go to keep apples from turning brown.)
  • Mix together the baking soda and flour and add to the ingredients in the bowl. Mix well (best with a fork) until all of the flour is absorbed by the wet ingredients.
  • Pour mixture into a greased one 9x13 or two 9? round pans. Bake for approximately 55 minutes.

Pour sauce over chicken and bring mixture to a simmer.  Make slurry: Whisk together cornstarch and water, then stir into sauce. Simmer until sauce is thickened and chicken is cooked through, 8 to 10 minutes more.  Divide rice and chicken between bowls and garnish with chopped pineapple, sesame seeds and green onions, if using.
