1 piece Cucumber (about 2" long)
1 tablespoon Japanese Plum butter
4 ounces pickled, yellow soybean
14 ounces Sushi rice
1 teaspoon Wasabi paste
2 roasted Nori seaweed

Steps:

  • Rinse the cucumber, peel and cut into fine strips.
  • Chop the edamame and mix with the plum butter.
  • Cut the nori sheets crosswise. Cover with rice, wasabi paste, edamame and cucumber. Roll the sushi.
  • Cut each sushi roll into 4 equal sized pieces.
