Grilled Butterflied Chicken Breasts Recipe | MyRecipes image

For even and faster cooking, butterfly your chicken before grilling. To do this, place one hand flat on top of the breast to hold it steady. Hold knife parallel to cutting board with other hand, and make a long, smooth cut horizontally through the middle of the breast. Stop about 1/2 inch short of cutting all the way through.

4 (6-ounce) skinless, boneless chicken breast halves
1 tablespoon olive oil
1 teaspoon brown sugar
1 teaspoon garlic powder
¾ teaspoon kosher salt
¾ teaspoon ground cumin
½ teaspoon smoked paprika

Steps:

  • Preheat grill to high heat. Why? Thin cuts cook quickly; high heat will give the exterior a good sear quickly without overcooking the meat.
  • Slice 1 breast half horizontally, cutting to, but not through, the other side. Open halves like a book, laying chicken flat. Repeat with remaining chicken. How? Place one hand flat on top of the breast to hold it steady. Hold knife parallel to cutting board with other hand, and make a long, smooth cut horizontally through the middle of the breast. Stop about 1/2 inch short of cutting all the way through.
  • Brush oil evenly over chicken. Combine sugar and remaining ingredients; sprinkle evenly over both sides of chicken.
  • Why? You've doubled the surface area of the meat--meaning more room for the spice rub and more area to pick up chargrilled flavor.
  • Grill chicken 2 to 3 minutes on each side or until done. Why? Because the butterflied breast is half the thickness now, it will cook very quickly.

I have absolutely fallen in love with my smokeless grill! It's a great tool for eating healthy and it cooks beautifully with no smoke! I can use it any time I want that outdoor grilled taste in my foods. I'm watching my weight and these chicken tenders turned out great! The addition of liquid smoke gives them that outdoor grilled taste that makes them so good!

2 large chicken breasts, boneless and skinless
adolph's meat tenderizer
1 dash(es) salt and pepper
paul prudhomme's poultry magic to taste
a few drops liquid smoke (optional)

Steps:

  • Liberally sprinkle chicken breasts with meat tenderizer and set aside for about 15 minutes. Set up smokeless grill according to manufacturer's instructions and then heat to 450.
  • Slice chicken breasts into tender-sized strips. Sprinkle with salt, pepper and Paul Prudhomme;s to taste. Note: the meat tenderizer also contains salt so adjust the amount of additional salt accordingly, if you add additional salt. Brush with a few drops of liquid smoke, if desired.
  • Once the grill has reached the desired temperature, lay seasoned chicken strips on the grill and cover. After a few minutes, turn. After about two to three more minutes, turn again. Continue until cooked through and juices run clear. Be careful not to over cook so that your chicken remains moist and tender and doesn't dry out. Enjoy with your favorite veggies and sides.
