This Butter-Baked Haddock is my all-time favorite fish recipe. It's quick and easy (ready in less than 30 minutes!), and the result is tender, moist, flaky, flavorful fish every time!

1 pound haddock fillets (boneless and skinless, each fillet about 4 ounces, thawed if frozen)
½ cup melted butter
¼ large lemon
salt and pepper (to taste)
paprika (to taste)
dried parsley (to taste)

Steps:

  • Preheat the oven to 375°F.
  • Pat the fish dry with paper towels.
  • Place the fish in a baking dish in a single layer.Note: I use an 11x7 or a 13x9-inch dish, depending on the size of the fillets; I like to use the smaller size, if I can, so that the butter is deeper and covers more of the fish.
  • Pour the melted butter over the fish.
  • Squeeze the juice from the lemon quarter evenly over the fish.
  • Season the fish with salt and pepper, then sprinkle with paprika and dried parsley.
  • Bake for 10 to 20 minutes, basting every 5 minutes, until the fish is cooked through (internal temperature of 145°F) and flakes easily with a fork. The color should be opaque. Note: the cooking time will vary depending on the thickness of your fish. I have had very thin fillets (about ¼ inch thick) that cooked in 10 minutes, while thicker fillets (about 1 inch thick) have taken up to 20 minutes.
  • Serve immediately. Drizzle each serving with some of the butter from the pan, if desired (I highly recommend this!).

Number Of Ingredients 6

1 haddock fillet, 6 ounces
1 1/2 teaspoons olive oil
1 tablespoon butter
1 teaspoon chopped shallot
1 teaspoon chopped thyme
2 tablespoons pan searing flour

Steps:

  • Coat haddock evenly on all sides with flour.
  • Pat off excess.
  • Heat skillet on Medium-High.
  • Pour approximately 1 1/2 teaspoons olive oil to lightly coat skillet.
  • Wait until oil faintly smokes before adding haddock.
  • Place haddock carefully in hot oil.
  • When sides have changed color about 1/3 to 1/2 of way up--1 to 2 minutes--turn carefully.
  • Lower heat and cook until internal temperature of 130 is reached.
  • Add butter, shallots and thyme to pan.
  • Melt and blend, but do not burn the butter.
  • Baste the fillet and continue cooking until temperature is 140.

    1. In a large shallow casserole pan on a high heat, mix the rice with 2 heaped teaspoons of tapenade, then pour over 600ml of water.
    2. Put the lid on and let it come to the boil while you halve the tomatoes and, in a bowl, mix them with 1 tablespoon each of olive oil and red wine vinegar.
    3. Taste, season to perfection with sea salt and black pepper, and tear in most of the basil leaves.
    4. Cut the fish into four equal-sized pieces and place in the pan, pushing them into the rice.
    5. Scatter over the dressed tomatoes. Put the lid back on and boil for 10 minutes, or until the rice is cooked through, then remove the lid and cook for a further 2 minutes until all the liquid has evaporated.
    6. Spoon the remaining tapenade over the fish, pick over the remaining basil leaves, drizzle lightly with extra virgin olive oil, and dish up.
