Mar 26, 2016 · Hopia is yet another favorite 'merienda' or snack for Filipinos. Hopia is made of thin flaky pastry, traditionally filled with mung bean paste (Munggo). But nowadays, there are more variations to choose from when it comes to the filling, most popular is the Ube or Purple yam and the one I prefer more personally.

May 25, 2015 · Flatten the dough and roll again like a jelly roll. Cut into 20-25 pieces, depending on of hopia you want. Roll out with the cut side up and then spoon the filling in (about 1 tbsp). Collect all the sides to create a ball then flatten with the smooth side up. Lay the hopia pieces on a baking pan and spread with egg wash.
