HOMESTYLE POTATO CHIPS RECIPE | ALLRECIPES
Making homestyle potato chips is fun and easy. Guaranteed they won't last long! A food processor with a slicing attachment is very helpful. Experiment with the thickness; you may like them thicker or thinner. I like to use olive oil because it has less trans fats, but you can use safflower, corn, or peanut oil as well as vegetable oil.

Steps:
- Place potato slices into a large bowl of cold water as you slice. Drain, and rinse, then refill the bowl with water, and add the salt. Let the potatoes soak in the salty water for at least 30 minutes. Drain, then rinse and drain again.
- Heat oil in a deep-fryer to 365 degrees F (185 degrees C). Fry potato slices in small batches. Once they start turning golden, remove and drain on paper towels. Continue until all of the slices are fried. Season with additional salt if desired.

Steps:
- Preheat oven to 400°F. Line shallow baking pan with aluminum foil; spray foil with cooking spray. Mix tomato sauce and brown sugar in small bowl; set aside.
- Combine meat, drained tomatoes, bread crumbs and eggs in medium bowl. Shape meat mixture into a loaf shape in pan.
- Bake 30 minutes. Remove from oven; pour tomato sauce mixture over meatloaf. Reduce oven temperature to 350°F. Bake 25 to 30 minutes more or until meatloaf is cooked through (160°F). Let stand 10 minutes before cutting into 6 slices.

Wendy’s uses a blend of food starches plus rice flour for the breading on their version, but my tests confirmed that cornstarch is all you’ll need for a great clone. The secret process starts by coating the potato slices with the dry breading mix, which contains salt. The salt in the blend will draw water out of the potatoes, magically transforming the dry breading into a wet batter in about 20 minutes.
When all the breading is wet, the potatoes go into the oil for partial frying. After resting a bit, they get dropped in again until golden brown and crispy. And, thanks to the cornstarch, these potatoes will stay crispy, even when they’re completely cool.
