16 ounces carrots (tops trimmed)
1 tablespoon good-quality olive oil
0.25 cup honey
1 tablespoon butter
0.5 teaspoon ground ginger
1 pinch Sea salt

Steps:

  • Preheat oven to 400º F. Line a baking tray with aluminum foil.
  • Rinse carrots and slice in half lengthwise. Arrange carrots on prepared baking tray and drizzle olive oil over the top. Toss the carrots to coat completely. Place carrots in oven and roast for 20 minutes or until tender crisp, stirring once or twice.
  • Meanwhile, combine the honey, butter and ginger in a small saucepan. Bring to a boil, then reduce heat and simmer gently for two minutes.
  • Remove carrots from the oven and season with sea salt. Transfer to a serving dish and drizzle with honey ginger glaze. Serve immediately.

A simple heirloom carrots recipe, roasted on a bed of citrus and finished with a dab of orange butter, sea salt and herbs!

12 heirloom carrots (-rainbow mix)
1 tbsp extra virgin olive oil (organic)
1 orange (-thinly sliced, organic)
1 pinch sea salt
1 tbsp softened butter ((optional))
1 orange (-zested)
6 sprigs lemon thyme

Steps:

  • Mix the butter and orange zest until well incorporated. Refrigerate while the carrots are roasting.
  • Arrange the orange slices on the bottom of an oiled shallow baking dish and cover with a few thyme sprigs.
  • Toss the carrots ( scrubbed well and dry ) with the olive oil and a pinch of sea salt and place them on top of the oranges and thyme.
  • Roast at 425? for about 40 minutes, until al dente turning once half way through cooking. If you prefer them softer cook an additional 10 minutes.
  • Remove the carrots from the oven and top with thin small dabs of the cold orange butter. Sprinkle with some fresh herbs and enjoy as a side dish next to steaks, roasts or chicken.
  • If you prefer a deeper caramelization of the carrots, just throw them under the broiler fire for a minute or two.

Perfectly Roasted Heirloom Carrots

  • Pre-heat oven to 425F degrees.

    Trim heirloom carrot tops keeping approximately 1 centimetre of greens. Do not peel the carrots, instead use the scrubbing side of a new kitchen sponge to clean your carrots. Cut any carrots with a diameter of more than 1 inch in half lengthwise. Arrange carrots on a baking sheet and rub with olive oil, salt and pepper. Transfer to the oven and roast for 18 minutes, flipping half way through cooking.

    When the carrots are almost finished roasting you can prepare the glaze. Melt the butter in a small saucepan over medium-low heat. As it begins to bubble add the honey and nutmeg and whisk continuously for 2-3 minutes.

    Drizzle the glaze over the carrots and return the baking sheet to the oven to roast for 2 additional minutes.

    Transfer to a serving platter and enjoy!
