This ham-and-cheese panini is a delicious and filling sandwich sure to please the whole family.

Steps:
- Melt butter in a medium skillet over medium-low heat; add shallots. Cover and cook, stirring occasionally, until softened, about 10 minutes. Add thyme and continue cooking until onions are caramelized, about 5 minutes. Remove from heat and set aside.
- Spread 1 1/2 teaspoons mustard on one side of a slice of bread. Top with a slice of cheese, 2 ounces ham, 1/4 of the shallot mixture, and another slice of cheese. Spread 1 1/2 teaspoons mustard on a second slice of bread and place mustard side down on top of cheese to form a sandwich. Repeat process three times with remaining mustard, bread, cheese, ham, and shallots.
- Brush top and bottom of each sandwich with olive oil. Place in a panini grill and press until bread is crisp and brown, and cheese has melted slightly, 9 to 10 minutes. If using a grill pan, preheat over medium-high heat. Place a heavy pan on top of sandwiches and press down. Cook, turning once, 2 to 3 minutes per side. Cut sandwiches in half and serve immediately.

- Heat oven to 375°F. Unroll dough onto ungreased cookie sheet. Starting at center, press out dough into 15x10-inch rectangle. Bake 10 minutes. Remove from cookie sheet; cool 5 minutes.
- Cut cooled crust into 4 rectangles. Top each of 2 rectangles with half of the ham and 4 triangles of cheese. Cover each with remaining crust rectangle.
- Meanwhile, heat 12-inch skillet or cast iron skillet over medium-high heat. Spray outsides of each sandwich with cooking spray. Place 1 sandwich in skillet. Place smaller skillet on sandwich to flatten slightly. Cook 1 to 2 minutes, turning once, until crisp and thoroughly heated. Repeat with remaining sandwich. Cut each sandwich into quarters.

This is what I created with leftover basil pesto, Italian bread, some Parmesan, ham and Mozzarella... Let me just say, there were no leftovers of this! Wow, melted cheese, pesto, olive oil...so good. If your pesto is oily you won't need the extra olive oil and also if you make your pesto with lots of Parmesan you may not need the additional cheese. My pesto is a little dry with not that much Parmesan because I like to add it later. And, a good substitute for the ham would be turkey or chicken.
