You won't find a simpler side dish on a Southerner's Easter table than nostalgic Pear Salad. But, don't let the name fool you; this recipe won't remind you of a leafy green salad or chopped fresh fruit. In fact, Southern Pear Salad is made with lettuce, canned pears, mayonnaise, Cheddar cheese, and maraschino cherries (really!). It's a recipe that may sound a little outside-the-box, but ask any born-and-bred Southerner – they've likely seen this on Nana's table growing up. And, it's worth a try. This no-fail recipe doesn't require any bake time or prep, and is super inexpensive to prepare. Grab a can of canned pears, pull out your jar of Duke's, and shred a little Cheddar to make this pear-mayonnaise concoction. Each canned pear half gets a dollop of mayonnaise, a sprinkling of cheese, and a cherry garnish. When you're ready to serve, arrange the pears on a few leaves of lettuce for a decorative touch.

1 head lettuce
1 (15-oz.) can pear halves
1/2 cup mayonnaise
1/2 cup Cheddar cheese, shredded
Maraschino cherries

Steps:

  • Arrange lettuce leaves on a dish. Drain canned pear halves, and place open-face-up on top of lettuce.
  • Spoon a dollop (about one tablespoon) of mayonnaise into each canned pear half, and sprinkle with Cheddar cheese. Top each pear half with a maraschino cherry.

Many holiday tables across the South aren't complete without a colorful congealed salad or two. We've published many, many Christmas-themed congealed salads over the years, and this recipe for Christmas Snow Salad, from November 1982, is still one of our all-time favorites. Despite its charming name, the recipe does not contain actual snow. (Sorry, kids.) This creamy, bright red jello salad is made with unflavored gelatin, crushed pineapple, whipped topping mix, mayonnaise, and powdered sugar, and is flecked with chopped red and green maraschino cherries and chopped pecans and walnuts. It looks like a delightfully retro Christmas tree ornament, especially if it is made in a fancy mold. Once the salad has set in the refrigerator and has been unmolded (make sure to use a chilled, not warm, plate or platter so the gelatin doesn't melt), Christmas Snow Salad is best served in slices. For a fun old-school look, plate the mold on lettuce leaves and top it with extra maraschino cherries. We guarantee that the kids at your table will be extremely impressed with this sweet and fruity treat—and so will the adults. Although, being adults, they may not express their excitement quite as strongly.

Number Of Ingredients 9

2 envelopes unflavored gelatin
1/2 cup cold water
1 (15 1/4-oz.) can crushed pineapple, undrained
1 (1 1/4-oz.) envelope whipped topping mix (such as Dream Whip)
1/3 cup mayonnaise
1/4 cup sifted powdered sugar
1 (10-oz.) jar red maraschino cherries, drained and chopped
1 (6-oz.) jar green maraschino cherries, drained and chopped
1/2 cup chopped pecans or walnuts

Steps:

  • Soften gelatin in 1/2 cup cold water; set aside. Drain pineapple, reserving juice; add enough water to juice to make 1 cup. Bring pineapple juice mixture to a boil, remove from heat, and stir in softened gelatin. Chill mixture until consistency of unbeaten egg white.
  • Prepare whipped topping mix according to package directions, omitting vanilla; fold 1 cup topping into gelatin mixture (reserve remaining topping for other uses). Gently fold next 5 ingredients and pineapple into gelatin mixture; pour into a lightly greased (with cooking spray) 4-cup mold. Chill until firm. Unmold on serving tray; garnish with additional cherries, if desired.
