- Preheat the oven to 350°F. In a large skillet over medium-high heat, warm the olive oil. Add the ground beef and cook, stirring, until browned, about 6–8 minutes. Drain and return to the skillet.
- Turn the heat down to medium and add the seasoning packet. Stir in the rice, peas, broth, and 1 cup of cheese. Let simmer for 3 minutes.
- Transfer everything to a 9×13 baking dish and bake for 15 minutes. Remove from oven and top with remaining cheese. Return to oven and bake for an additional 10 minutes. Serve hot.

- Preheat oven to 375 degrees F. Bring a large pot of water to a boil. Season the water with salt.
- Spray the baking dish with vegetable oil spray.
- Cook the cauliflower in the boiling water until crisp-tender, about 5 minutes. Drain well and pat between several layers of paper towels to dry. Transfer the cauliflower to the baking dish and set aside.
- Bring the cream to a simmer in a small saucepan, and whisk in the cream cheese and mustard until smooth. Stir in 1 cup of the cheese, salt, pepper and garlic and whisk just until the cheese melts, about 1 to 2 minutes. Remove from heat, pour over the cauliflower, and stir to combine. Top with the remaining 1/2 cup cheese and bake until browned and bubbly hot, about 15 minutes. Serve.

- Heat olive oil in a large skillet over medium heat. Add onion, bell pepper, and garlic and cook until softened. Add chili powder, cumin, and cayenne until fragrant, 1 minute. Add ground beef and cook until browned. Transfer beef mixture to slow cooker along with tomatoes, kidney beans and beef broth, and season generously with salt and pepper. Cover and cook on high for 4 to 6 hours or low for 8 to 10 hours. When ready, stir in dry pasta and cook on high for 15 minutes more. When pasta is tender stir in cheeses until evenly distributed and melted. Garnish with scallions and serve.
