Golden Pancakes Recipe: How to Make It - Taste of Home image

My mother made these delicious pancakes way back in the Depression years. She beat the batter by hand, but I use my blender. It does a great job in breaking down the cottage cheese for a smooth batter. -Ann Thomas, Telford, Pennsylvania

Yield about 14 pancakes.

Number Of Ingredients 7

6 large eggs
1 cup cream-style cottage cheese
1/2 cup all-purpose flour
1/4 cup milk
1/4 cup canola oil
1/2 teaspoon vanilla extract
1/4 teaspoon salt

Steps:

  • In a blender, combine all ingredients. Cover and process for 1 minute. Pour batter by 1/4 cupfuls onto a greased hot griddle; turn when bubbles form on top. Cook until second side is golden brown.

Number Of Ingredients 10

2 large eggs
3 tbsp. of flour
0.5 tsp. of salt
0.125 tsp. of pepper
1 c. of coarsely shredded apples
2.5 c. of (about 1 pound) coarsely shredded russet potatoes
1 tbsp. of finely chopped green onions
0.5 c. of shredded Cheddar cheese
0 oil
0 syrup or applesauce, for serving

Steps:

  • 1. Beat eggs. Stir in flour, salt and pepper. Stir in apples, potatoes, green onions and cheese.
  • 2. Heat 1/2 inch of oil in a skillet over medium-high heat.
  • 3. Drop potato mixture by level tablespoonfuls into hot oil. Flatten into 1-1/2-inch rounds. Pan-fry for 3 to 4 minutes per side, or until golden and crispy. Drain on paper towels.
  • 4. Add more oil as needed.
  • 5. Serve warm with syrup or applesauce.
  • 6. TIP: To prevent darkening, place shredded apples and potatoes in a bowl of water with 1-1/2 teaspoon lemon juice. Drain thoroughly before using.
