I knew this recipe wouldn't be here at Zaar because it's very very old. It came from my ex-boyfriend's Aunt Suzie. She was different from the rest of the family (she a Baptist, they were Catholic) which made her the black sheep. She and I got along like peas and carrots. I commented that I loved to cook and she gave me this recipe. It was her husband's grandmother's recipe. She said it was his favorite.

Yield 1 batch

Number Of Ingredients 4

1/2 cup sugar
2 tablespoons cornstarch (corn flour)
1 cup fruit juice
2 tablespoons corn syrup

Steps:

  • Bring the sugar and 1/2 cup juice to a boil.
  • Dissolve the cornstarch in the remaining juice. Add to the boiling juice and cook till thick.
  • Stir in the corn syrup. Bring back to a boil and remove from heat.
  • Cool and drizzle over cake.

This fruity cake topping jazzes up any Christmas cake recipe and looks really tempting and festive!

50 g apricot jam
250 g glacé or dried fruits whole or cut into large strips
pecans
walnuts
almonds
pine nuts

Steps:

    1. Place the apricot jam in a small pan with a splash of water and simmer on a low heat, then remove from heat and leave to cool a little.
    2. Using a pastry brush, brush the top of the cake with jam and arrange your fruit on top, starting with the bigger pieces, dotting the smaller fruits and nuts in and around the gaps.
    3. Finish the cake by brushing everything with a final coat of the apricot glaze to give it a lovely gloss.

After the mixture begins to boil, reduce the heat to low, and allow cooking for up to ten minutes, occasionally stirring throughout. As the fruit/berries soften, use a wooden spoon to break them in pieces to release the flavors from the berries. Remove from heat. Using a strainer, pour liquid into a bowl ensuring to press as much juices through strainer with wooden spoon. Dispose any of the solid fruit/berries leftover from mixture, and return liquid to pan on low heat. Meanwhile, whisk the cornstarch with 2 tablespoons of water in a small bowl. Then, pour into the simmering pan of berry juice. Increase heat to high, and continue to whisk the mixture until it thickens into a glaze (approximately 3-5 minutes). Remove glaze from heat, and pour into separate bowl to cool down. Once the glaze has reached room temperature, place in refrigerator until it is chilled.
