Make Ahead Frozen Tomato Sauce Cubes Recipe - CookEatShare image

Number Of Ingredients 11

1/2 c. Flour
6 ounce Tomato paste
1 tsp Prepared mustard
2 tsp Sugar
2 tsp Onion pwdr
2 tsp Salt
1/2 tsp Dry basil
1/4 tsp Pepper
1/4 tsp Garlic pwdr
1 Tbsp. Extra virgin olive oil
3/4 c. Water

Steps:

  • ( Heat butter in saucepan; remove from heat. Add in flour and stir till moistened. Add in remaining ingredients, except water; stir till smooth. Gradually stir in water. ( Pour sauce into 81/2 x 41/2 x 23/4" loaf dish. Freeze till consistency of ice cream. Cut into 32 cubes; remove to chilled tray. Freeze till solid. Package, label, date and return to freezer. Recommended storage time: 1 month. To use, cook 1-pt. pkg. frzn beans in 1/2 c. lightly salted water till tender. Add in 4 Tomato sauce Cubes. Stir and continue cooking till sauce is smooth and thick. NOTES : Four of these frzn cubes add in tomato-basil flavor to green beans

2 tsp Salt
3/4 tsp Curry pwdr
1/2 tsp Onion pwdr
2/3 c. Flour
3/4 c. Instant nonfat dry lowfat milk
3/4 c. Hot water
2 Tbsp. Parmesan cheese, grated

Steps:

  • Heat butter; remove from heat. Add in salt, curry and onion powders; stir to dissolve. Add in flour; stir till moistened. Gradually stir in lowfat milk and water. Stir in cheese. Pour into 8 1/2x4 1/2x2 3/4" loaf dish. Freeze till consistency of ice cream. Cut into 32 cubes; remove to chilled tray. Freeze till solid. Package, label, date and return to freezer. Recommended storage time: 1 month. To use, cook I-pint. pkg. frzn peas in 2/3 c. lightly salted water till tender. Add in 8 Curry Sauce Cubes. Stir and continue cooking till sauce is smooth and thick. Don't overcook delicate peas. (For less sauce, use 1/3 c. water and 4 cubes.) NOTES : A hint of curry enhances delicately flavored peas

If you cook with wine, this is a great trick. Make ahead, freeze and use as needed. No need to open a bottle when your recipe calls for wine. *One cube equals 2-3 Tablespoons, which equals 1- 1 1/2 cups wine. Choose your favorite red or white or make both. Kudos to Eleanor Hetz for this recipe, posted in the Chicago Tribune 2/05. Enjoy! UPDATE: 1/11, I made 2 trays from about 1 liter of wine. It really doesnt' matter how much wine you start with, just reduce it by half. Cooking time is for both reduction & chilling, not freezing. You're on your own for that one!
