1?½ cups white sugar
1 teaspoon vanilla extract
2 large eggs eggs
1 cup milk
1 tablespoon fresh lemon juice
½ cup unsweetened cocoa powder
1 cup hot water
2?½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ cup butter

Steps:

  • Cream butter or margarine and sugar together in a large bowl. Add vanilla, and then eggs to the mixture.
  • In another bowl, mix together flour, soda, baking powder, and salt. Sour the milk by adding the lemon juice or vinegar. Add flour mixture alternately with soured milk to the creamed mixture.
  • Mix cocoa and hot water together, and beat into batter.
  • Bake 30 to 35 minutes at 350 degrees F (175 degrees C). Cool, and frost with desired frosting.

(1 1/2 sticks) unsalted butter, melted and cooled slightly

whole milk, room temperature

(8 oz.) block cream cheese, softened

1 c.

(2 sticks) unsalted butter, softened

Steps:

  • Preheat the oven to 350° and grease a 9 x 13” metal baking pan with baking spray. Make the cake: In a large bowl, whisk the flour, granulated sugar, brown sugar, cocoa powder, baking soda, baking powder and salt. In another large bowl, whisk the butter, milk, eggs, sour cream, and vanilla. Add the dry mixture to the wet mixture and stir until well combined. Scrape batter into prepared baking pan and smooth top. Bake until a toothpick inserted in the center comes out clean, about 35 to 40 minutes. Let cool completely on a wire rack. Make the frosting: In a large bowl, beat the cream cheese, butter, powdered sugar, vanilla, and salt until light and fluffy, about 3 minutes. In another large bowl, beat the coffee, sugar, and hot water until light and fluffy, about 4 minutes. Scrape the coffee mixture into the cream cheese mixture and beat until well combined. Spread frosting over cooled cake, garnish with sprinkles, slice, and serve.
