1 tablespoon butter
1 cup cubed new potato
1 1/2 cups broccoli (or any combination of leftover veggies)
4 eggs
2 tablespoons water
1/2 cup grated parmesan cheese
salt
pepper

Steps:

  • Melt butter in non-stick pan.
  • Sauté veggies over medium high heat until warmed through, about 3-4 minutes.
  • While veggies are in pan, scramble eggs and water.
  • Add cheese and scramble until foamy.
  • Turn heat down to medium.
  • Pour eggs over veggies in pan.
  • Let eggs cook in pan until set-about 7-8 minutes.
  • Run spatula around edge of pan, slide frittata onto serving plate.
  • Season to taste with salt& pepper.

Not knowing what to fix for breakfast can be a real chore. This was the result of "I'm tired of the same old thing". Served this with homemade biscuits and sliced tomatoes. Makes two generous servings.

Number Of Ingredients 10

1 -2 tablespoon olive oil
1 medium red skin white potato, washed
1/2 medium red bell pepper, diced
3 -4 green onions, washed and sliced
1/2 cup sliced mushrooms
3 slices Canadian bacon, diced
1 cup egg substitute or 4 eggs, beaten with
1/4 cup milk
1/4 cup shredded mozzarella cheese
salt and pepper

Steps:

  • Using medium shredder blade of food processor, shred the potato.
  • Warm olive oil in non-stick skillet, add potato, bell pepper, green onions, mushrooms and bacon.
  • Cook and stir until potato is lightly browned and other vegetables are crisp tender.
  • Add salt and pepper to taste, pour egg mixture over vegetables.
  • Cook until eggs are almost set, running spatula around edges and allowing uncooked egg to run to bottom of pan.
  • When eggs are almost set, invert onto a dinner plate and then slip back into pan allowing the bottom to cook completely.
  • The last few minutes top with shredded cheese and cover until cheese melts.
  • Cut in half and slip onto serving plates.

Add the onions and cook for several minutes, stirring frequently, until the onions are soft and golden brown. Add diced potato, sprinkle with salt and pepper, and stir to cook with the onion for a couple of minutes. Add the kale and stir to cook about 1 minute. Finally, add the roasted red peppers and olives and stir until everything is hot.Make sure all the ingredients are evenly distributed across the bottom of the skillet, then pour in the egg mixture so that it evenly coats everything. Let it sit on the burner for 30-45 seconds to set the edges, then put the skillet in the oven.Watch the frittata as it cooks.
