Oil for frying
1 1/2 cups round buttery cracker crumbs (40 crackers)
1/3 cup sliced almonds
2 eggs
1 tablespoon water
1/2 cup all-purpose flour
2 lb. walleye or other pan fish fillets
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Heat 1/4 inch of oil in large skillet over medium-high heat until hot. In pie pan, combine cracker crumbs and almonds; mix well. Beat eggs in another pie pan. Add water; beat well. Place flour in third pie pan.
  • Sprinkle fish fillets with salt and pepper. Dip in flour, then in egg mixture. Coat with cracker crumb mixture. Place fillets, a few at a time, in hot oil. Cook 3 to 5 minutes or until golden brown and fish flakes easily with fork, turning 3 or 4 times. Drain on several layers of paper towels.

1 large egg
1 teaspoon honey
1 cup coarsely crushed saltines (about 22 crackers)
1/3 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
4 to 6 walleye fillets (about 1-1/2 pounds)
Canola oil
Additional honey

Steps:

  • In a shallow bowl, beat egg and honey. In another bowl, combine the cracker crumbs, flour, salt and pepper. Dip fillets into egg mixture, then coat with crumb mixture. , In a large skillet, heat 1/4 in. of oil; fry fish over medium-high heat for 3-4 minutes on each side or until fish just begins to flake easily with a fork. Drizzle with honey.

  • "1. Rinse and pat dry fish. 2. Mix together flour and seasonings together in a pie plate. I am guessing a little on the amount, so season to taste. 3. Pre-heat large fry pan over medium heat. I like either cast iron or stainless pans for this. 4. Add oil to pan, enough so that there is about a 1/2 inch or so in the bottom. 5. Bread fish by turning in the flour a couple times. Turn when ready, it should only take a few minutes, but will depend on the size of the filets. 8. Remove from pan when lightly browned, you don't want to over-cook and dry the fish out. Place the fish on a cooling rack lined with paper towels. Don't put on a plate or your fish will get soggy. You can place this in a warm oven to keep the fish warm while you cook the next batch.
