Fried Sweet Potatoes with Apples is savory, delicious and absolutely irresistible comfort food. Number Of Ingredients 12

1 large sweet potato (peeled and cut in small dice)
3-5 slices medium-sized onion (sliced and separated into rings)
1/4 cup red bell pepper (diced)
1 to 2 large Gala apples (peeled and diced or peeled, cored and sliced in rings)
1 tsp. chives
1/2 tsp. parsley
1/4 tsp. sage
1/4 tsp. marjoram
1/4 tsp. thyme
1 tsp. sea salt (or kosher salt)
1/3 tsp. pepper
2 to 3 tbsp. coconut oil (or avocado oil )

Steps:

  • Heat cast iron skillet or other skillet over medium heat.
  • Add coconut oil and melt.
  • Add sweet potatoes, onions, bell pepper, and seasonings.
  • Cover and cook about 20 minutes, turning over potatoes every five minutes to prevent sticking or scorching.
  • Add apple pieces and cook through, about 10-15 minutes more, until potatoes and apples are fork tender.
  • Continue turning over potatoes every five minutes to prevent sticking.

1 (29 ounce) can sweet potatoes
1 (21 ounce) can apple pie filling
2 teaspoons brown sugar
½ teaspoon ground cinnamon

Steps:

  • In a large bowl, mix together sweet potatoes, apple pie filling, brown sugar and cinnamon. Transfer to a medium microwave-safe dish.
  • Microwave on high 5 minutes, or until the mixture is hot and bubbly.
