These grilled chicken breasts are easy to cook yet delicious, healthy and affordable.

2 skinless boneless chicken breasts (1/2" – 3/4" thick)
1 tsp olive oil
Salt to taste
Pepper to taste

Steps:

  • Preheat your George Foreman Grill for at least 5-7 minutes on high with the lid closed.
  • Lightly brush chicken breasts with olive oil.
  • Sprinkle salt and pepper to taste.
  • Place on grill and grill for 6 minutes (with an optimal internal temperature of 165F/74C).
  • Make sure to turn the chicken breasts halfway around the 3-minute mark so they get nice grill marks on both sides.

8 ounces plain nonfat yogurt
1 teaspoon lemon juice
2 tablespoons paprika
1 tablespoon garlic powder
1/4 teaspoon salt
1/2 teaspoon ground ginger
1/2 teaspoon cumin
1/2 teaspoon cayenne pepper
4 boneless skinless chicken breasts

Steps:

  • 1. Mix together all of the marinade ingredients in a bowl.
  • 2. Cover chicken with the marinade, and store in the refrigerator for 1-8 hours.
  • 3. Grill chicken and serve. (I use the George Foreman grill).
