? 1 c Butter
? 1 c Sugar
? 1 c Brown Sugar
? 1 c Vegetable Oil
? 1 Egg
? 1 tsp Vanilla
? 1/2 tsp Salt
? 1 tsp Cream of Tartar
? 1 tsp Bake Soda
? 1 c Rice Krispies
? 1 c Oat Meal (not instant)
? 1 c Coconut
? 1 c Chopped Walnuts
? 3 1/2 c Flour
1/4 c Sprinkles

Steps:

Set oven to 350 degrees.
In a large bowl or the bowl of a stand mixer add butter and sugar. Beat until light and fluffy.
Add egg, vegetable oil and vanilla. Beat until blended.
Next, add salt, cream of tartar, baking soda, rice krispies, oatmeal, walnuts and coconut.
Mix in flour 1 cup at a time.
Blend in sprinkles.
Drop by the spoonful onto a cookie sheet. Leaving space between each so that the cookies do not run together.
Bake 12 minutes for a softer cookie or 15 minutes for a crispier cookie.
Wait 1 – 2 minutes before transferring to a cooling rack.

This one has a bit of everything I like in a cookie-chocolate, oats, nuts and coconut. A friend of mine gave me a recipe for them, but I made some changes. I find that when you cut sugar, you can actually taste the other ingredients better. I also increased the coconut and oats.

Ingredients

1/2 lb salted butter
1/2 cup brown sugar
1/2 cup sugar
2 eggs
1 1/2 teaspoons vanilla
2 1/4 cups flour
1 teaspoon salt
1 teaspoon baking soda
1/2 cup chopped walnuts
1 cup rolled oats
1 cup coconut
1 cup chocolate chips

Steps:

Cream butter and sugar.
Add eggs and vanilla.
Beat until fluffy.
Mix flour, salt, baking soda.
Add to sugar mixture.
Add in rolled oats.
Add in walnuts and coconut.
Stir in chocolate chips.
(For a crisper outside and softer inside you can refrigerate dough for one hour.).
Drop in ping pong size balls. (rounded teaspoons are fine, but the larger ball seems to work better-plus, less scooping!).
Bake in preheated oven at 375 for 8 to 10 minutes.
