Steamed Egg (Chawan Mushi) Recipe | Allrecipes image

This recipe is for enjoying the texture of eggs at the most tendermost but easiest level. It has the sweetest aroma I have ever tasted in eggs using the least ingredients.

Prep Time 5 minutes

Cook Time 12 minutes

Yield 2 servings

Number Of Ingredients 7

2 eggs
1 cup cooled chicken or fish stock
1 dash sake
½ teaspoon soy sauce
½ cup chopped cooked chicken breast meat
1 shiitake mushroom, sliced into strips
2 sprigs fresh parsley, for garnish

Steps:

  • In a medium bowl, whisk eggs gently while slowly pouring in the chicken stock, sake, and soy sauce. Divide the mushroom and chicken evenly between two small tea cups. Pour the egg mixture into each cup until filled.
  • Bring about 1 inch of water to a boil in a steamer or saucepan. Reduce heat to a simmer, and place cups into the steamer. Cover, and steam for 12 minutes, or until egg is firm but soft and silky like tofu. Garnish each cup with a sprig of parsley, and serve.

STEAMED EGG (??) | MADE WITH LAU

Steamed Egg (??) | Made With Lau image

Learn how to make this heavenly soft Chinese comfort food that's perfect for all occasions!

Provided by Made With Lau

Total Time 15 minutes

Prep Time 5 minutes

Cook Time 10 minutes

Yield 4

Number Of Ingredients 7

4 egg
2 cups warm water
2 green onions
0.5 tsp salt
0.5 tsp chicken bouillon
0.5 tbsp oil
white pepper

Steps:

  • Chop the green onions to be added as garnish at the end.
  • Place the steamer rack in the wok, and place your bowl on top of the rack.
  • Crack the eggs into a bowl, and add salt, chicken bouillon, and oil. Start mixing the eggs with a fork or chopstick.
  • This is a really important step that determines the Steamed Egg's final fate of fluffiness.
  • Make sure that the water is boiling in the wok and that your stove is still on high heat.
  • After you cover the wok, leave the stove on high heat until the water starts boiling again. This should take anywhere from 1 to 4 minutes.
  • Once the dish is done steaming, remove the lid. Add green onion and white pepper to the bowl.
  • Depending on how much clearance you have (and pain tolerance), put on oven mitts and carefully lift the bowl out of the wok. You may need to use the spatula as a lever for more clearance.

PERFECT BOILED EGGS RECIPE - NYT COOKING
If your goal is perfectly smooth, blemish-free boiled eggs that jump out of their shells every single time, I’ve got bad news: No technique in the world can promise that level of perfection. But armed with data from scientific tests done with more than 90 testers and more than 700 boiled eggs, this technique for boiled eggs — technically steamed, as they cook in just an inch of water — will maximize your odds. Fresher eggs will take slightly longer to peel, but they should peel just as cleanly as older eggs. The eggs in this recipe should be cooked straight from the refrigerator; reduce cooking times by 1 minute if using room-temperature eggs.

  • Drain eggs, then peel and eat immediately, or transfer them to a plate and allow them to cool naturally before storing in the refrigerator for up to a week directly in their shell. (A small dot made with a permanent marker on the top of each cooked egg will ensure you don’t mix them up with the raw eggs.) Do not shock them in an ice bath after cooking; this makes them more difficult to peel.
