1 eggplant large
salt
olive oil
flour
2 large eggs beaten

Steps:

  • Cut the eggplant into slices approximately 1 centimeter thick and place into a colander. When a layer is completely covering the bottom, sprinkle liberally with salt. Repeat. Set aside for 1 hour.
  • Blot the eggplant with a paper towel to remove any excess liquid.
  • Heat oil in a skillet.
  • Dip the eggplant slices into flour and then into the egg. Fry in batches.
  • Remove from skillet and place onto paper towels to remove the excess grease. Serve immediately while hot.

2 eggplants, large
1/4 teaspoon salt
2 cups flour
1/2 teaspoon baking powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon chili powder (ground chiles, not the mix you use to make chili)
1 1/2 cups water
1 tablespoon vegetable oil

Steps:

  • Wash the eggplants and cut into 1 inch slices. Place the slices on a rack or in a colander, sprinkle with the salt, and let sit for 15 minutes. This will release Mix remaining ingredients into a batter.
  • When the oil is hot, dip a few pieces of the eggplant in the batter until well coated. Carefully place into the hot oil, and fry for 3-5 minutes on each side, until golden brown.
  • Remove from oil and place on paper towels to drain any excess oil.
  • Serve immediately.

  • Cut off the top part of the eggplants. Peel the eggplants. Slice the eggplants crosswise into slices less than 1/4 " thick. Place the slices in a large colander over a large bowl. Sprinkle liberally with the coarse grained salt. Place a dish on the eggplants as a weight to help squeeze out the bitter liquid. Let stand for about 20 min. Heat the solid shortening in a deep fryer. Wash the eggplant slices carefully in cool water to remove all traces of the salt. Pat dry with paper towels. Line a serving dish with paper towels. Lightly flour the eggplant slices. Preheat the oven to 375 degrees. Deep fry the eggplant slices, a few at a time, till they are lightly golden on both sides (about 3 min). Remove the slices from the or possibly deep fryer and place on the prepared serving dish to drain. Sprinkle the fried eggplant slices lightly with salt. Cut the prosciutto into small pcs. Coarsely chop the parsley and marjoram together on a board. Transfer these ingredients to a large bowl. Add in the Large eggs and lowfat milk. Mix well with a fork. Add in salt and pepper to taste. Butter a (13 1/2"x8 3/4"x1 3/4") oven safe baking dish. Place the eggplant slices in the baking dish in layers. Pour the egg and seasoning mix over. Bake for 30 min.
