Make a change to your midweek bowl of pasta and use tiny rice-sized orzo to make this Mediterranean-style recipe – a great quick dinner for vegetarians.

Oil for frying
1 large onion, finely chopped
3 garlic cloves, chopped
1½ tbsp tomato paste
4 fresh oregano sprigs, finely chopped
Small bunch fresh parsley or fresh dill, chopped, plus extra to serve
2 x 400g tins plum tomatoes
150g black olives, pitted
300g orzo (see Know-how)
150g feta
Lemon wedges to serve

Steps:

  • Heat a big glug of olive oil in a large frying pan over a low-medium heat, then gently fry the onion and garlic for 10 minutes until very soft. Increase the heat to high, add the tomato paste and herbs and cook for 1 minute, stirring. Add the plum tomatoes and olives and reduce on a medium-high heat for 15-20 minutes until thick – crush the tomatoes in the pan with a wooden spoon.
  • Meanwhile, cook the orzo in a large pot of boiling salted water until very nearly cooked (about 8 minutes). Rinse the orzo under warm water and drain well. Add the orzo to the tomato sauce, and season lightly (see Food Team’s tip). Crumble over the feta and serve with extra herbs and lemon wedges, if you like.

    1. If your meat is not already minced, whiz it up in a food processor to the required consistency and place it in a bowl.
    2. Use the food processor to turn the bread into breadcrumbs, then add to the meat.
    3. Bash up the cumin seeds and dried chilli in a pestle and mortar, and pick and finely chop the rosemary leaves. Add to the mince with the dried oregano and egg yolk. Season well with sea salt and black pepper.
    4. At this stage you could add your optional ingredients (peeling and finely chopping the onion and garlic first, then cooked together gently in 1 tablespoon of oil until tender and allowed to cool).
    5. Mix well, and, with wet hands, roll and pat into meatballs the size and shape you want (cook straight away or put on greaseproof paper and refrigerated for up to a day.)
    6. Preheat the oven to 200°C/400°F/gas 6 and heat a thick-bottomed casserole pan on the hob.
    7. Swirl 4 tablespoons of oil around the pan and add your meatballs. Fry until brown all over, being careful not to break them up.
    8. Turn the heat down and cover with the Basic tomato sauce, pick the basil leaves and tear in fresh basil, tear over the mozzarella and finely grate over the Parmesan.
    9. Cook in the oven for about 15 to 20 minutes, or until the cheese is golden.

  • Remove core from the cabbage. Place cabbage in a large saucepan and cover with water. Bring to a boil; after about 3 minutes, outer leaves should be tender enough to remove. Return to a boil; reduce heat and simmer until leaves are tender, about 10-15 minutes. Remove the tough center stalk from each leaf; reserve extra leaves and line a large baking dish with them. (If leaves for rolling are too brittle, return to boiling water for 1-2 minutes.) , Combine meat, rice, onion, egg and seasonings. Place about 2 tablespoons of meat mixture on each cabbage leaf. Roll toward the stalk, tucking in sides. Place rolls, seam side down, in a baking dish. , Combine sauce ingredients; pour over rolls. Cover and bake at 350° for 1-1/2 to 1-3/4 hours.
