200 g alkaline noodles ( , light yellow ones (either dried or fresh ones))
2 tbsp. sesame oil
2 garlic cloves
2 tbsp. warm water
2 tbsp. sesame paste
1 tbsp. sesame oil
1 tbsp. light soy sauce
1 tbsp. dark soy sauce
4 tbsp. warm water
1/8 tsp. Chinese five spice powder
small pinch of salt
pickled radish
green onion
sugar
vinegar (optional)
Chinese Chili oil

Steps:

  • Cook the dried noodles for 4-5 minutes or fresh ones for 3-4 minutes. Transfer out and drain.
  • Place the noodles to a clean operating board, add sesame oil and combine well. This process can cool down the noodles quickly and creating a chewy texture. Set aside to cool down completely.
  • Tune sesame paste
  • Other serving ingredients
  • Garlic water
  • Assemble the noodles

2 tablespoons olive oil
1 red onion
4 -6 garlic cloves
1 tablespoon italian seasoning
1 teaspoon red chili pepper flakes
1 tablespoon sugar
1 tablespoon balsamic vinegar
0.5 (6 ounce) can tomato paste
1 (28 ounce) can whole tomatoes
5 -6 sun-dried tomatoes packed in oil, chopped
fresh basil, Chopped
salt and pepper

Steps:

  • Sautee onions and garlic in olive oil until soft.
  • Add Italian seasoning, chile flakes, sugar, balsamic vinegar, salt and pepper and cook for a few minutes.
  • Add tomato paste and sundried tomatoes and cook for a few minutes.
  • Add can of tomatoes and break up with spoon.
  • Puree with a hand blender.
  • Cook for 1-2 hours on low heat, stirring occasionally.
  • Remove from heat and add Basil.
  • Adjust seasoning.
  • Serve over pasta.

Slide noodles onto a plate and set aside temporarily.Return skillet to medium-high heat with remaining 1 tablespoon oil. Add garlic along with white and light green parts of green onion and quickly sautée until fragrant, about 30 seconds. Return noodles to skillet along with soy sauce mixture. Toss well with a pair of tongs or chopsticks, breaking up clumps of noodles as you go, until noodles are entirely coated, about 2 to 3 minutes. Add dark green parts of green onion, carrot ribbons, and bean sprouts and cook for 1 minute more or until  just softened.Remove from heat and divide among bowls; serve immediately.
