Dry fried Cauliflower

500 g cauliflower ( , cut into small pieces)
1.5 tablespoon vegetable cooking oil
6 ~8 chili peppers or as needed ( , cut into small sections)
Around 10 whole Sichuan peppercorns
4 green onions ( , cut into sections around 10 cm)
2 garlic cloves ( , sliced)
Salt as needed

Steps:

  • Wash the cauliflower and drain.
  • In a heat wok or pan add cauliflower in to stir fry the extra water out. Keep stir frying until the cauliflowers becomes slightly brown.
  • Add around 1/2 tablespoon cooking oil in and keep stir frying for another 5~8 minutes until the cauliflowers are almost cooked thoroughly. Transfer out or push them to one side of your wok.
  • Heat 1 tablespoon of cooking oil in wok on medium fire, add garlic, chili pepper sections, Sichuan Peppercorn to stir fry until aroma. Add salt and mix all the ingredients all together.
  • Turn off the fire, add green onion sections. Do a quick stir fry and serve hot!

250g thick dried vermicelli
500g fresh egg noodles
250g bean sprouts
300ml coconut milk
180g tofu puffs
200g prawns (deshelled and deveined)
150g fish cakes (sliced)
20g curry leaves (finely chopped)
150g laksa paste
1 tsp brown sugar
1 lime (juiced)
2 tbsp fish sauce
2 tbsp cooking oil
Fresh chillies (sliced)
Soy sauce

Steps:

  • To Prep Blanch the dried vermicelli, egg noodles, tofu puffs and bean sprout separately and set aside. To Cook Heat up a wok and add the cooking oil. Once the wok is hot, add the laksa paste and fry until it is slightly drier and very fragrant. Add the curry leaves and continue frying for 1 min. Add the coconut milk, mix it well and bring to boil. Add the prawns, fish cakes and tofu puffs and stir fry for 5 mins before adding in the blanched vermicelli, egg noodles, bean sprouts and then stir well. Season with brown sugar, fish sauce and lime juice. Serve hot with fresh chillies in soy sauce.
