Wonderful Buffalo-style fried chicken wings!

12 small chicken wings
¼ teaspoon seasoned salt, or to taste
1 cup all-purpose flour
1 teaspoon coarse salt
½ teaspoon ground black pepper
¼ teaspoon cayenne pepper
¼ teaspoon paprika
1 (12 fluid ounce) bottle Buffalo wing sauce (such as Frank's®), or to taste
2 quarts vegetable oil for frying

Steps:

  • Season chicken wings lightly with seasoned salt.
  • Mix flour, salt, black pepper, cayenne pepper, and paprika together in a wide, shallow bowl. Press wings into flour mixture to coat and arrange onto a large plate so they do not touch. Refrigerate coated wings for 15 to 30 minutes.
  • Dredge wings again in flour mixture and return to the plate. Refrigerate wings again 15 to 30 minutes.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Fry chicken wings in hot oil until crisp and no longer pink at the bone and the juices run clear, 9 to 12 minutes. An instant-read thermometer inserted into the thickest part of the meat, near the bone should read 165 degrees F (74 degrees C).
  • Transfer fried wings to a large stainless steel bowl. Drizzle sauce over the wings and toss to coat.

Yum! These oven-baked chicken wings are juicy, crispy, and perfect for football season. The seasoning mix gives just a hint of flavor but adds a nice crispy texture to the wings. We tried them with and without Buffalo sauce... both were delicious!

1/3 cup(s) all-purpose flour
1 tablespoon(s) paprika
2 teaspoon(s) garlic powder
1 teaspoon(s) black pepper
1/4-1/2 teaspoon(s) cayenne pepper
3 pound(s) chicken wings, tips removed

Steps:

  • Cut wings at joint. Preheat oven to 425°.
  • Combine flour, paprika, garlic powder, black pepper, and cayenne pepper in a large resealable zip bag.
  • Shake to mix ingredients and add wings. Shake to coat wings.
  • Line a large baking sheet with release foil and spray with cooking spray.
  • Add wings in a single layer and spray wings with cooking spray. You may need 2 baking sheets depending on size of wings.
  • Bake for 30 minutes. Turn wings over and bake for another 15 minutes or until crispy and done.
  • I sometimes add 1 tsp of Cajun seasoning to the flour mixture and then the wings don't even need sauce. They are tasty just as they are.

Bake until wings are crispy and browned for 50-60 minutes. Remove the wings and add them to a large (clean) bowl. Toss them with the barbecue sauce, then bake them for an additional 5 minutes.
