This is one of my favorite appetizers. We have lots of pig roasts here in Kentucky, and these small sandwiches are perfect to serve while the pig is roasting. —Rebecca Rose, Mount Washington, Kentucky

- Beat cream cheese, mayonnaise and dressing mix until blended; let stand 30 minutes. , Spread cream cheese mixture on bread. Top each with 2 cucumber slices and, if desired, dill and red onion slivers. Refrigerate, covered, until serving.

- I wash and score the cucumber with a fork along the entire lenth of the cucumber, all the way around, to make a design Slice thinly and set aside.
- Combine cream cheese, Good Seasonings Italian mix and Tabasco sauce.
- Spread cream cheese mixture, generously on each slice of cocktail bread, place slice of cucumber and sprinkle the top with dill.

- "Take 4 slices of white bread at a time and cut off the crusts. Cut the bread into 4 pieces and place on a large platter. Continue until your platter or platters are filled. Spread mayo onto each slice, don't be stingy. Then slice your cucumber fairly thin and place onto the bread with mayo. To finish, sprinkle the lemon pepper all over the tops of the cuc's. That's it! Makes a lot with only 1 loaf of bread and 1 cucumber! All my friends go crazy over these. I've never had one left over!!!"
