HOMEMADE COUNTRY STYLE SAUSAGE RECIPE | SIDECHEF

Homemade Country Style Sausage Recipe | SideChef image

This recipe is adapted from a recipe I found on Epicurious. This was a sufficient cheater recipe, considering I do not have a meat grinder to help emulsify the sausage.

Total Time 900S

Yield 4

Number Of Ingredients 5

1 pound 80/20 Lean Ground Pork
3 tablespoon Fresh Sage
1 tablespoon Salt
1 1/2 teaspoon Crushed Red Pepper Flakes
1 teaspoon Ground Black Pepper

Steps:

  • Place a metal mixing bowl into the freezer, so it can keep the pork as cold as possible when you make it.
  • Prepare the minced Fresh Sage (3 tablespoon) and combine it with the Salt (1 tablespoon), Ground Black Pepper (1 teaspoon) and Crushed Red Pepper Flakes (1 1/2 teaspoon).
  • Pull the cold bowl from the freezer and add the 80/20 Lean Ground Pork (1 pound), along with the seasoning mixture. I substituted sriracha for the crushed red pepper and added that at this point.
  • With gloved hands or extremely clean hands, mix everything together as quickly and thoroughly as possible.
  • Use plastic wrap to wrap the sausage up. Try and form it into a cylindrical shape, so you can slice patties easily.
  • Wrap the ends, making sure to get all the air out. Place in the fridge for up to 3 days or the freezer for up to a month.

COUNTRY SAUSAGE PATTIES RECIPE | MYRECIPES
Country sausage patties require some fat to stay moist, which is why Boston butt is a good cut of pork for this recipe. The sausage is best when the mixture is made a day ahead and refrigerated, allowing the spices to permeate the meat overnight. You can, however, cook the patties right away.
