Your family will love this country fried steak. Its delicious! I used to make it, but over the years, my husband has taken over the job of country fried steak chef, so we often debate who's is the best. He adds a teaspoon of paprika to his flour and I can not tell a lie, His country fried steak is really something special, so I will add that to the recipe! If you just buy cubed steak instead of round, it will save you from having to pound out the steak! Also milk will work just fine in this recipe, but the buttermilk definitely gives it something extra! Enjoy!

Number Of Ingredients 17

FOR THE STEAKS
2 1/2 pound(s) boneless round steak (sometimes i use cubed steak for less prep)
1 teaspoon(s) salt
1/2 teaspoon(s) pepper
2 cup(s) all-purpose flour
1/2 teaspoon(s) garlic salt
1 teaspoon(s) paprika
1 - egg
1/2 cup(s) milk
- canola oil for frying
FOR THE GRAVY
1/4 cup(s) all purpose flour
3 tablespoon(s) reserved pan drippings
1 tablespoon(s) bacon grease
2 cup(s) milk
1/2 teaspoon(s) salt
1/2 teaspoon(s) pepper (fresh, corarsley ground pepper works well)

Steps:

  • Pound steak to 1/4 inch thickness; cut into serving size pieces.
  • Sprinkle steak with 1 tsp. salt and 1/2 tsp. pepper.
  • Beat together egg and buttermilk a bowl
  • In a separate bowl, mix flour with paprika and garlic salt. Dredge steak in flour mixture and dip in 1/2 cup milk mixture, Return to flour mixture and dredge again.
  • Brown steaks in hot oil in a large skillet and drain on paper towels; set aside, keeping warm.
  • FOR THE GRAVY
  • Pour off pan drippings, reserving 3 tablespoons, add another tbsp bacon grease. Add 1/4 cup flour to drippings; cook over medium heat until bubbly, stirring constantly.
  • Add 2 cups of milk; cook until thickened, stirring constantly. Stir in 1/2 tsp. salt, and 1/2 tsp. pepper.
  • Spoon gravy over steak and serve!

This recipe was my Grandmother's and it actually won a Blue Ribbon in the Tennessee State Fair! Be sure to use fresh squash, I use butternut but other squash would also be good.

6 pounds butternut squash - peeled, seeded and sliced
1 egg, beaten
½ cup milk
½ cup all-purpose flour
½ cup cornmeal
1 pinch salt
1 pinch ground black pepper
1 pinch garlic salt
1 cup oil for frying

Steps:

  • Combine egg and milk together in a small bowl, mix well.
  • In a second bowl, combine flour, cornmeal, salt, pepper and garlic salt. Dip squash slices first in the egg mixture, then dredge the squash in the dry mixture.
  • Heat 1/2 inch of oil in a deep skillet over medium heat. Fry squash until golden brown.

  • When all steaks have been cooked off, pour off all but 2 tablespoons of the cooking oil and lower heat. Add 3 tablespoons of the leftover flour mixture to the oil and whisk to create a paste. Cook until golden, about 1 minute. Gradually add the milk to the flour and oil mixture while whisking together. Season the gravy with salt and pepper, to taste. Let cook until thickened; about 10 minutes. Pour gravy over the steak to finish and garnish with parsley.
