Chocolate Chip Cookie Dough Recipe - Food Network image

Meet your new favorite sweet treat; just a little bit will enhance your ice cream, milkshake, buttered toast-or serve as the filling of a cookie sandwich (smush some of the dough in between two vanilla wafers).

1 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon fine salt
1/2 cup packed light brown sugar
1/4 cup granulated sugar
4 tablespoons unsalted butter, at room temperature
2 tablespoons plain yogurt
1/2 teaspoon alcohol-free vanilla extract
1/3 cup semisweet mini chocolate chips

Steps:

  • Microwave the flour in a small microwave-safe bowl for 1 minute. Remove and stir well. Microwave for an additional minute or until the temperature reaches 180 degrees F. Sift into a medium bowl, then whisk in the baking soda and salt (see Cook's Note).
  • Beat the brown sugar, granulated sugar, butter, yogurt and vanilla extract with an electric mixer on medium-high speed in a large bowl until well combined, about 2 minutes. Add the flour mixture and mix on low speed until well incorporated. (Turn off the beaters and use your hands to help combine if needed.) Fold in the chocolate chips with a rubber spatula or mix them in with your hands.
  • Refrigerate in an airtight container for up to 5 days.

all-purpose flour

1 1/2 c.

light brown sugar

1 c.

unsalted butter, at room temperature

1 tsp.

vanilla extract

2 tbsp.

milk 

1 tsp.

kosher salt

1 c.

mix-ins: chocolate chips, mini M&M's, sprinkles, or chopped nuts

Steps:

  • For the heat-treated flour: Place the flour in a large bowl.  Microwave on high in 30 second intervals, until a digital thermometer inserted into the flour reads 165˚ (check the temperature in multiple spots to get an accurate read). Stir well, then let cool completely. Remove any small clumps.   Combine the brown sugar and butter in a large bowl. Beat with a hand mixer or stand mixer with a paddle attachment until creamy and well combined, about 2 minutes. Add in the vanilla and milk and mix until combined. In a small bowl, combine the salt and heat-treated flour. Add the flour mixture to the butter mixture in 2 to 3 batches, mixing thoroughly to combine between each addition. With the mixer on low, add in your mix-ins and mix just until combined.

  • Allow cookie dough to sit at room temperature for 10 minutes. Place into the bowl of a stand mixer fitted with the paddle attachment and mix on low speed to break up the dough. Add ground cinnamon and mix on low speed until distributed throughout the dough. Scoop dough by the tablespoon and roll into balls. Set aside. Spread parchment paper over a work surface or on a baking sheet. Place 6 ounces of finely chopped chocolate in a microwave-safe bowl. Microwave in 30 second intervals, stirring after each interval, until chocolate is melted. Check the temperature of the chocolate; it should be 110 degrees F. If it is too cool, heat it for 5 second intervals until the proper temperature is reached. Stir in remaining 2 ounces of roughly chopped chocolate until it has melted and the chocolate cools to 87 degrees F. Dunk each ball of cookie dough into melted chocolate, spooning melted chocolate over the surface until coated. Use a fork to scoop each ball out, gently shaking off the excess chocolate back into the bowl, then place truffle onto the parchment paper. While chocolate is still wet, sprinkle a tiny bit of cinnamon on the top of the truffle. Repeat with remaining dough balls. If chocolate starts to get too cool (starts hardening on the side of the bowl), return it to the microwave for 5 seconds and stir before continuing. Allow truffles to set up at room temperature for 5-10 minutes, until chocolate has hardened.

These are BIG FAT COOKIES! The lack of egg in this recipe gives the cookies a different texture than most chocolate chip cookies; they are slightly more crispy and less "gooey." It occurs to me that they really remind me of Chips Ahoy cookies, or other commercially produced chocolate chip cookies (maybe McDonald's cookies? I can't tell, but they definitely evoke something I've had before.) :-) Yum!
