1/2 cup(s) bisquick, or gluten free bisquick one cup of bisquick can be substituted by a mix of one cup of flour, 1½ teaspoons of baking powder, ½ teaspoon of salt, and 1 tableorspoon of oil or melted butter.
3/4 cup(s) sugar
4 - eggs
2 cup(s) milk
1 cup(s) coconut, flaked
1 teaspoon(s) vanilla
1 tablespoon(s) butter, softened
MAGICALLY MAKES IT'S OWN CRUST

Steps:

  • Combine all ingredients and pour into 9 inch buttered pie pan. Like magic, it layers into a crust, custard, coconut topping.
  • Bake at 400 degrees for 25-30 minutes until custard sets.

Dough for single-crust pie
1-1/2 cups whole milk
1 cup sugar
3/4 cup sweetened shredded coconut
2 large eggs, lightly beaten
3 tablespoons all-purpose flour
1 tablespoon butter, melted
1/4 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. , In a large bowl, combine milk, sugar, coconut, eggs, flour, butter and vanilla. Pour into crust. , Bake until a knife inserted in the center comes out clean, 45-50 minutes. Cool to room temperature on a wire rack. Refrigerate leftovers.

Two eggs just didn't seem to be enough to make a custard. I also added 1/4 tsp. of cinnamon and nutmeg and 1/2 tsp. of almond extract. The pie was perfectly sweet and the almond extract brought the flavor up a notch. I followed the rest of the recipe to the letter. I love coconut custard pie and I will make this recipe again.
