Steps:
- Line 1 large or 2 small jelly-roll pans with aluminum foil, spray with nonstick spray and arrange the saltines salt-side down in a single layer.
- In a medium saucepan, melt the butter and brown sugar together and boil until it turns a caramel color, about 2-3 minutes.
- Remove from the heat and add one teaspoon pure vanilla extract.
- Pour over the crackers, covering them evenly.
- Put the pan into the oven and bake for about 5 minutes, or until just bubbly, watching carefully.
- Remove from the oven and pour the chocolate chips over the crackers.
- When the chips melt a bit, spread them over the crackers with a knife.
- Cool completely. You can put the pan into the freezer for 15 to 20 minutes to get completely cold.
- Break up into pieces. Store in an airtight container.

- "In a Large bowl pour in all of the ingredients except the white chocolate and colored sugar. Place the melting chocolate or bark in a bowl & microwave for 90 seconds. Stir and, if needed, heat an additional 15 seconds until it’s smooth and creamy, watching closely so it doesn't burn. (You can also use a double boiler to get perfectly melted chocolate). Drizzle melted chocolate over the mixture in the bowl and mix around to coat it all. Once fully coated, take a large cookie sheet and pour coated mixture onto the sheet and spread it out and allow to cool completely. Sprinkle lightly with the red and green sugar. Once cooled, break into pieces. Store in an air tight container- does NOT need to be refrigerated. "
