CHOCOLATE TIRAMISU CAKE RECIPE - PILLSBURY.COM

That's amoré--our decadent version of a coffee-scented Italian favorite has a time-saving cake layer made from prepared mix.

1 box (1 lb 2.25 oz) German chocolate cake mix with pudding
Water, oil and eggs called for on cake mix box
1/4 cup granulated sugar
1 teaspoon instant coffee granules or crystals
1/4 cup water
1/4 cup coffee-flavored liqueur
1 cup whipping cream
1 container (8 oz) mascarpone cheese or 1 package (8 oz) cream cheese, softened
2 tablespoons powdered sugar
2 teaspoons vanilla
1 teaspoon unsweetened baking cocoa

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Grease bottoms and sides of 2 (9-inch) round cake pans with shortening or cooking spray. Make and bake cake as directed on box, using water, oil and eggs. Cool 10 minutes. Remove from pans to cooling racks. Cool completely, about 25 minutes.
  • Meanwhile, in 1-quart saucepan, mix granulated sugar, instant coffee and water. Heat to boiling over medium heat. Boil and stir 1 minute. Remove from heat. Stir in coffee liqueur. Cool completely, about 30 minutes.
  • Brush flat side of each cake layer with soaking syrup until absorbed. Place cakes in freezer for 5 minutes.
  • In chilled 1-quart bowl, beat whipping cream with electric mixer on high speed until stiff peaks form. (Do not overbeat.) In another small bowl, beat mascarpone cheese, powdered sugar and vanilla with electric mixer on low speed until blended. Fold whipped cream into mascarpone mixture until smooth and creamy.
  • Place 1 cake layer rounded side down on serving plate. Top with half of mascarpone mixture. Place second layer rounded side down on top. Top with remaining mascarpone mixture. Cut cake into wedges; place on individual dessert plates. Place cocoa in fine strainer; sprinkle plates and cake with cocoa. Store cake in refrigerator.

1 package plain devil's food cake mix or 1 package German chocolate cake mix
1 1/4 cups water
1/3 cup vegetable oil
3 large eggs
1 teaspoon pure vanilla extract
3/4 cup hot water
2 tablespoons instant coffee powder
3 tablespoons sugar
1/4 cup Kahlua or 1/4 cup other coffee-flavored liqueur
2 cups nonfat vanilla yogurt
2 (8 ounce) packages cream cheese, at room temperature
1/2 cup confectioners' sugar
1 teaspoon unsweetened cocoa powder or 1 teaspoon sweetened cocoa powder

Steps:

  • Place rack in the center of the oven and preheat the oven to 350 degrees.
  • Lightly mist a 13 by 9 inch pan with vegetable oil spray.
  • Set pan aside.
  • Place the cake mix, water, oil, eggs and vanilla in a large mixing bowl.
  • Blend with an electric mixer on low speed for 1 minute.
  • Stop the machine and scrape down the sides of the bowl with a rubber spatula.
  • Increase the mixer speed to medium and beat 2 minutes more, scraping the sides down again if needed.
  • The batter should look thick and well combined.
  • Pour the batter into the prepared pan, smoothing it out with the rubber spatula.
  • Place the pan in the oven.
  • Bake the cake until it springs back when lightly pressed.
  • Approximately 35 minutes.
  • Remove the pan from the oven and allow it to cool.
  • Prepare the syrup.
  • Place the hot water, coffee powder and sugar in a small bowl and stir until the coffee and sugar have dissolved.
  • Stir in the Kahlua.
  • Using a drinking straw or a chopstick, poke holes in the cooled cake.
  • Spoon the syrup over the cake so that it seeps down into the holes.
  • Prepare the topping.
  • Place the yogurt, cream cheese and confectioner's sugar in a bowl and blend on low speed until thick and well combined.
  • Spread the topping over the cake out to the edges with a spatula.
  • Refrigerate the cake.
  • Shortly before serving, sift the cocoa powder over the top of the cake.
  • Store this cake covered in plastic wrap in the refrigerator for up to 3 days.

  • For the Chocolate Cake LayersPreheat the oven to 350 degrees, grease and flour three 8x2 inch round pans.  This could also be baked in two 9 inch rounds or a 9x13 pan. In a medium bowl add the flour, baking powder, baking soda and salt.  Whisk to blend and set aside. In another bowl, add the buttermilk, oil, vanilla and the cocoa powder that has been dissolved in hot water.  Set aside In the bowl of your mixer, add the butter and mix at medium speed until smooth Gradually add the sugar and continue to mix on medium speed for 3 to 5 minutes or until lightened in color and fluffy.   Add the eggs one at a time mixing until the yellow of the yolk disappears. Alternately add the flour mixture and buttermilk mixture, beginning and ending with the dry ingredients (3 additions of dry ingredients and 2 additions of liquid ingredients). Do not mix above medium speed or over mix the cake batter. Bake at 350 degrees for 22 to 30 minutes  (check at 22 min.) The cake is done when a toothpick inserted into the center comes out clean or with just a few crumbs attached.  Let cool in pans 5 to 10 minutes then turn out. For the Espresso & Kahlua SyrupMix coffee, Kahlua and powdered sugar and set aside to cool. For the Whipped Chocolate Mascarpone Filling and FrostingFirst, place a bowl and the whisk attachment or beaters, if using a hand mixer, in the freezer  for at least 10 minutes.  This will help in whipping the heavy cream. Dissolve 1 Tablespoon espresso powder in 1/4 cup heavy cream. In the bowl of your mixer, add the softened mascarpone, 2 cups powdered sugar, 3 tablespoons cocoa powder, 1 Tablespoon vanilla and the dissolved espresso powder. Cover the bowl with a towel to avoid a cloud of powdered sugar. Begin mixing on low speed gradually increasing the speed to medium until the  mixture is combined and smooth. Set aside. In the chilled bowl,  whip the heavy cream to stiff peak stage. Stiff peak stage is when you raise the beater, the cream will form a peak standing straight or it might curl over slightly.  Be careful not to over beat, this can happen rather quickly so don't walk away from your mixer. Gently fold the whipped cream into the mascarpone mixture until combined. Assembly of the CakePlace a cake layer on the pedestal or cake base Brush the Espresso & Kahlua syrup over the cake layer Apply the whipped chocolate mascarpone filling (staying about 1/4 inch from the edge of the cake layer, otherwise it will be pressed out when adding the next cake layer Repeat for the second and third cake layers. Frost the cake in whipped chocolate mascarpone frosting. We frosted it smooth on top, and textured around the sides with a small offset spatula. I dusted cocoa powder on top of the cake, tapping it through a small sifter (to prevent clumps). I piped a border of the frosting using a french tip (Ateco 869)- any large star tip will do!

    1. Preheat the oven to 180ºC/350ºF/gas 4. Grease and line a large shallow tray (approximately 25cm by 40cm).
    2. In a large bowl, use an electric hand whisk to whiz the sugar and eggs together for about 4 to 5 minutes, or until light and fluffy. Meanwhile, melt the butter in a small pan on a medium heat, then fold it through the sugar and egg mixture with a spatula. Sieve the flour and cocoa powder into the bowl and carefully fold the mixture together in a figure of eight motion. The sponge should be fairly cool by now, so tear it into chunks and use it to cover the base of a 20cm by 30cm serving dish in a double layer (don’t worry if it breaks up). Sprinkle over the Tia Maria and drizzle with the espresso and leave those to soak in for a couple of minutes.
    5. Spoon the mascarpone mixture over the top, spreading it out in a fairly even layer. Dust the whole thing with a little cocoa powder, then scatter with some shavings of dark chocolate, if you like. Pop in the fridge until you’re ready to eat.
