Coffee flavored chocolate cookies that have a brownie feel.

3 (1 ounce) squares unsweetened chocolate
2 cups semisweet chocolate chips
½ cup butter
3 eggs
1 cup white sugar
2?¼ teaspoons finely ground espresso beans
¾ cup all-purpose flour
? teaspoon baking powder
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets or line them with parchment paper.
  • In the top of a double boiler, melt together the unsweetened chocolate, 1 cup of the chocolate chips and the butter. This can also be done in a microwave oven on low setting. Stir occasionally until melted. In a medium bowl, beat the eggs and sugar until thick and light, about 3 minutes. Stir in the espresso. Add the chocolate mixture, mix well. Sift together the flour and baking powder, fold into the egg mixture. Carefully fold in the chopped nuts and remaining chocolate chips.
  • Drop dough by tablespoonfuls 2 inches apart onto the prepared cookie sheets. Bake for 10 to 12 minutes in the preheated oven. Cookies will have a crackled appearance when done. Cool on baking sheets.

75 g dark chocolate
30 g whole espresso coffee beans
cocoa powder

Steps:

  • Melt the chocolate by breaking it into pieces and warming it slowly in a saucepan over a very low heat.
  • When the chocolate is melted, stir in the roasted coffee beans.
  • Keep mixing until they are coated in chocolate.
  • Lift them out with a fork and drop them onto parchment or waxed paper.
  • Separate the beans from one another, then drop into cocoa powder and leave to harden.
  • Remove the beans with a palatte knife and keep in a sealed container.

  • Whisk together 1 cup milk and cornstarch in a small mixing bowl until smooth. In a 3 1/2-quart saucepan combine sugar, salt, and remaining 1/2 cup milk. Cook over low-heat, stirring frequently until sugar is dissolved. Whisk in espresso powder and cornstarch mixture. Cook over medium heat until mixture thickens, about 5 to 7 minutes. Whisk about 1/2 cup cornstarch mixture into egg yolks in a large mixing bowl. Whisk this back into espresso mixture in saucepan and cook over medium-low heat 5 minutes, or until mixture is thickened further. Remove from heat and whisk in vanilla and chopped chocolate. Transfer to one prebaked and cooled Perfect Piecrust. Place plastic wrap directly onto filling (to prevent film from forming). Let stand 1 hour; then refrigerate for 6 hours. Microwave 2 teaspoons cream in a small microwave-safe bowl for 10 seconds. Stir in espresso powder. Place remaining cream in a chilled mixing bowl. Beat at medium-high speed until soft peaks from. Add powdered sugar, 1 tablespoon at a time, until medium firm peaks form. Add espresso mixture, beating just until incorporated. Spread over chilled pie and top with grated chocolate.
