Chicken and eggplant sauteed, then baked with dill weed, turmeric, tomato and onion. Serve with hot cooked rice, if desired.

1 (4 pound) chicken, cut into pieces
1 eggplant, sliced into 1/2 inch rounds
5 tomatoes, sliced
1 onion, thinly sliced
2 tablespoons chopped fresh dill weed
2 tablespoons ground turmeric
salt to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large skillet, saute chicken until browned. Remove from skillet and set aside. In same skillet, saute eggplant slices until slightly browned.
  • Place sauteed chicken and eggplant in a lightly greased 9x13 inch baking dish. Top with tomato and onion slices, then sprinkle with dill weed, turmeric and salt to taste.
  • Bake at 375 degrees F (190 degrees C) for 45 minutes or until chicken is cooked through and juices run clear.

This is an easy recipe for chicken slow roasted in a delicious creamy dill sauce.

3 pounds bone-in chicken pieces
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup milk
1 cup sour cream
1 teaspoon dry onion soup mix
1 teaspoon dried dill weed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Place the chicken pieces into the prepared baking dish. Pour the mushroom soup (undiluted), milk, and sour cream over the chicken. Season with onion soup mix and dill. No need to stir.
  • Bake for 1 1/2 hours in the preheated oven, or until the chicken is falling off the bone. The longer you can cook it, the better it will taste.

After looking on the internet for days for a Chick-Fil-A copycat and finding only plain old fried chicken recipes, I decided to try and imitate it myself. It came out pretty darn close I think! There are two crucial ingredients chick-fil-a uses that most recipes dont have- pickle juice and sugar. They also use MSG- but its also ok without it if you dont like it. Just cut up the breasts into chunks and follow recipe for nuggets. (Edit: I also have to say I love Chick- Fil-A and that I think they're a great company. I encourage anyone to visit if they can, the staff is always so nice and polite at every location I've been to! Its just too bad they don't have more locations!)
