1 tablespoon soy sauce
1 tablespoon rice wine vinegar
1/2 teaspoon granulated sugar
4 teaspoons sesame seeds
2 teaspoons vegetable oil
1/2 teaspoon red pepper, crushed
1/2 teaspoon ground ginger
3 garlic cloves, minced
4 cups broccoli florets, in bite-size pieces

Steps:

  • In a bowl combine soy sauce, vinegar & sugar, then set aside.
  • In a skillet over medium heat, add sesame seeds & cook for 1 minute, then remove seeds & set aside.
  • To the skillet add oil, red pepper, ginger & garlic & cook for 30 seconds, then add broccoli & cook for another minute.
  • Add soy mixture, then cover the pan & cook for 2 minutes, before sprinkling the sesame seeds over the broccoli & serving.

Maocai is a traditional Han Chinese snack in Chengdu. It is slightly different from Mala Tang. The word "Mao" is a verb here. Prepare a pot of spicy and fragrant soup, and use a bamboo spoon to fill the dish, usually one spoon is one serving. Cook it in a pot, then transfer it to a bowl, add another spoonful of soup by the way, and add various seasonings prepared by the boss. There are no restrictions on the raw materials for cooking. It is similar to Chuanchuanxiang and hot pot. You can take anything and serve it on the table. Maocai is a fast food with Sichuan characteristics.

80 grams Hot pot bottom material
80 grams Lotus root
140 grams potato
44 grams Pleurotus ostreatus
66 grams lettuce
131 grams Green bean sprouts
11 grams garlic
2 pieces shallot
1 teaspoon Soy sauce
1 teaspoon Chili oil
2 grams pepper powder
1 g MSG

Steps:

  • Wash lettuce and bean sprouts, peel and slice lotus root and potatoes, wash and tear the oyster mushrooms into small pieces by hand, mince garlic, chopped green onions
  • Heat the oil in the pot, pour the hot pot ingredients into the pot and stir fry until fragrant
  • add water
  • Bring to a boil, add oyster mushrooms
  • Bring to a boil again and put in potato chips and lotus root slices
  • Potatoes and lotus root slices are cooked and put in lettuce
  • Pour in bean sprouts
  • Season with a little salt and turn off the heat
  • Put chili oil, a little soy sauce, pepper powder, monosodium glutamate, minced garlic and chopped green onion in the bowl, then put the cooked vegetables into the bowl and mix well.
