Chinese Almond Cookies Recipe: How to Make It image

Each Christmas, my mother baked these Chinese almond cookies and stored them in clean coffee cans. When she passed away, I started giving our kids a can of these sentimental sweets. (Traditional Chinese almond cookies typically use lard, but butter is a great substitute if you don't have lard on hand.) —Jane Garing, Talladega, Alabama

1 cup butter, softened
1 cup sugar
1 large egg, room temperature
1 teaspoon almond extract
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup sliced almonds
1 large egg white
1/2 teaspoon water

Steps:

  • Preheat oven to 325°. In a large bowl, beat butter and sugar until light and fluffy, 5-7 minutes. Beat in egg and extract. Combine flour, baking soda and salt; gradually add to creamed mixture. , Roll into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Flatten slightly with a fork. Sprinkle with almonds, pressing to adhere as needed. In a small bowl, beat egg white and water. Brush over cookies. , Bake until edges and bottoms are lightly browned, 14-16 minutes. Cool for 2 minutes before removing from pans to wire racks.

Number Of Ingredients 6

100 g Low-gluten flour
8 grams cocoa powder
20 grams yolk
20 grams Light cream
60 grams condensed milk
Right amount Powdered sugar

Steps:

  • Put egg yolk, whipped cream, and condensed milk in a bowl and mix well.
  • Mix low-gluten flour + cocoa powder through a sieve, pour it on the kneading mat, and pour the mixed pulp in the middle.
  • Wear disposable gloves and use a scraper to cut and scratch repeatedly.
  • Make it into a smooth dough, wrap it in plastic wrap and refrigerate for 30 minutes.
  • Take out the dough, put oil paper on top and bottom, and roll it into a 3mm thick dough sheet with a rolling pin.
  • Use a 4cm diameter eight-petal floret stamper to extrude the florets.
  • Squeeze each leaf of the floret a little with your hands, so that it will look more like a pine cone.
  • The two small flowers are stacked in a staggered manner, and the center is compacted with chopsticks, being careful not to crush them.
  • A total of 5 layers are stacked.
  • Finally, take a small flower and cut it into two pieces, and arrange half of it into a small flower heart by hand.
  • Place it on the top and dip it with a little bit of water. Use your hands to move all the petals upwards to complete the shape of the pine cone.
  • Place them evenly on the baking tray and send them to the middle layer of the preheated oven.
  • Bake at 160 degrees for 10 minutes.
  • Sprinkle a little powdered sugar on the surface to make a snow scene, and the cute little pine cone biscuits are ready!
