- Preheat the oven to 375 degrees F (190 degrees C).
- Combine the olive oil, garlic, chili powder, garlic powder, salt, and pepper in a large, resealable bag; seal and shake to combine. Add the chicken wings; reseal and shake to coat. Arrange the chicken wings on a baking sheet.
- Cook the wings in the preheated oven 1 hour, or until crisp and cooked through.

CRISPY BAKED CHICKEN LEG QUARTERS (VERY EASY, ONE DISH ...
This is one that I adapted from Recipe #199636 after I scored 4 huge chicken leg quarters on sale. ($0.39 a pound!). I added a few things and adjusted the cooking time and temp to to what worked for me. The skin got SO crispy and the chicken was moist and retained the flavors. It also fell off the bone. I hope you enjoy! UPDATE 11/13/15: THANK YOU for all of the great reviews! I am so glad it's such a hit! Make sure you check out the reviews for some other ideas on how to switch it up a little (but the original is still my personal favorite).

Steps:
- Preheat oven to 375.
- Line a large glass baking dish with foil. You can also add a baking rack to the pan to keep the chicken out of the grease and to help air circulate and make it crispier.
- Remove excess fat from chicken quarters.
- Separate the skin from the chicken, taking care that the skin stays attached at most points on the chicken. (You just want a flap. Do not remove the skin).
- Brush the chicken (under the skin) with soy sauce.
- Sprinkle some garlic powder, seasoned salt and dill weed on the chicken under the skin (I estimated the 1 tsp measures. Use as much or as little as you're comfortable with) and rub into the chicken.
- Arrange the leg quarters in the pan, skin side up, taking care not to crowd. They need space to cook properly.
- Brush both sides of the leg quarters with soy sauce.
- Sprinkle the skin with garlic powder, seasoned salt and dill weed (to taste).
- Place on middle rack in over and bake uncovered for an hour.
- After an hour, increase oven temp to 400 and bake 15 minutes.
- Chicken is done when internal temp reaches 165 (insert meat thermometer at thickest part of thigh, taking care not to touch the bone).
- Let stand for 5 minutes before serving.

- "1. Line a sheet pan with foil. Set a rack in the pan. 2. Set aside while you sear the chicken. Preheat your oven to 375 degrees. 3. Grab your chicken leg quarters, Give them a rinse and pat them dry. Sprinkle with a little kosher salt. 4. Set a nonstick pan on the stove over high heat and spray with a little canola oil. Let it heat up for a minute or two. Sear the chicken legs 5. When the pan is hot, drop in a few of the chicken leg quarters, skin-side down. You don’t want to crowd the pan (or your chicken will steam, not sear), so do this in a few batches. 6. Cook them on high like this for a few minutes, until the skin is nice and brown, like this. You’re going to make a little smoke. That’s just fine. 7. When the skin is browned, transfer the chicken to your prepared pan. Repeat with the rest of the chicken. (I only brown the skin side. I find that intense high heat on the skinless underside can dry the meat out a little.) 8. When all your chicken is browned, you’re ready to coat it in barbecue sauce. Put the sauce in a medium-sized bowl so it’s easier to work with. 9. Using a brush, paint each piece of chicken on all sides with barbecue sauce. 10. When each piece of chicken is coated, pop the pan into your preheated 375 degree oven. Bake like this for 15 minutes. 11. Brush with the remaining barbecue sauce, covering each piece on all sides again. 12. When the chicken is coated again, pop the pan back into the oven. Bake at 375 degrees for 30-35 minutes more, until they’re cooked through completely. (Your chicken should be in the oven for a total of 45-50 minutes.) 13. After 30-35 minutes, they should have a nice crust. If you’re a meat thermometer type, you want a reading of 165 degrees in the thickest part of the chicken (without touching a bone). "
