5 tablespoons butter
1 medium onion, chopped
2 (8 ounce) cans crabmeat, drained
1 (15 ounce) can artichoke hearts, drained and chopped
2 tablespoons parsley
1/4 teaspoon salt
2 -3 cups chicken, cut into bite-sized pieces
1 -2 cup shredded cheese
1/2 teaspoon paprika
1 cup coarse breadcrumbs

Steps:

  • Grease a 9x13 baking dish and preheat the oven to 350°F.
  • Cook the chicken (I use tenderlions and sauté them in a skillet with a tablespoon of olive oil).
  • In 3 quart or larger sauce pan, sauté onion in 2 tbsp butter until tender at a medium heat. Add the chicken, crab, artichokes, parsley, salt and paprika. Stir occasionally until everything is hot.
  • Mix in the cheese; I didn't have room in my 3 quart pan to add the cheese, so I layered cheese and the contents of the pan in the baking dish and mixed it up there.
  • Put the contents of the pan into the baking dish. Cover and bake at 350 for 15 minutes.
  • Melt the remaining 3 tbsp butter and stir it into the bread crumbs so that they are a little moist and stick together. Sprinkle over the baking dish and bake uncovered until bread crumbs are golden (about 10 minutes).

2?½ cups shredded cooked chicken meat
½ cup cracker crumbs
¼ cup minced onion
¼ cup mayonnaise
¼ cup tartar sauce
1 teaspoon dried parsley
¼ teaspoon salt
¼ teaspoon black pepper
2 dashes hot sauce
1 cup seasoned bread crumbs
¼ cup olive oil for frying

Steps:

  • In a bowl, mix the chicken, cracker crumbs, onion, mayonnaise, tartar sauce, parsley, salt, pepper, and hot sauce. Form the mixture into 6 cakes. Place the bread crumbs in a bowl. Dip the cakes into the bread crumbs to evenly coat.
  • Heat the olive oil in a skillet over medium heat, and cook the cakes until evenly browned, about 5 minutes on each side. Drain on paper towels before serving.

  • "Preheat oven to 400F. Tenderize chicken breasts to about 1/4 inch thick. Mix crab with onions, tomatoe paste, salt and papper. Place 2 to 3 tbsp crab mixture along the length of each chicken breast half. Roll up to enclose filling. Cut squares of foil larger than each chicken piece. Brush foil with oil and roll tightly around each chicken piece, twisting the ends to seal. Place in a baking dish and bake 12 to 15 minute or until cooked through (probably longer for our oven). In a small pan, melt butter. Add shallot; cook 2 minutes. Add brandy and boil rapidly to reduce liquid by half. Stir in flour, then gradually add wine and stock. Bring to a boil; cook, stirring, until sauce has thickened. Add shrimp and whipping cream and simmer 2 minutes. Add lemon juice and dill. Remove chicken from foil, adding any juices to sauce. Slice chicken breasts. Arrange on plates and top with sauce. "
