- In a large skillet, saute celery, green pepper and onion in butter until tender; remove from the heat. Add chicken, rice, broth, peas, pimientos, salt and pepper; mix well. Spoon into a greased 13-in. x 9-in. baking dish. , Combine soup and mayonnaise; spread over chicken mixture. For topping, combine stuffing and almonds; sprinkle over casserole. Drizzle with butter. , Cover and bake at 350° for 30 minutes. Uncover and bake 15 minutes longer or until bubbly.

- Lightly toast almonds in a medium skillet over medium-high heat, about 2 minutes, stirring constantly. Remove from skillet and set aside. Coat the same skillet with non-stick cooking spray and cook onion 6 minutes over medium-high heat or until browned, stirring frequently. Add chicken, rice, green beans and 1/2 cup water; stir gently until combined. Bring to a boil and reduce heat to medium-low. Cover and simmer 10 to 12 minutes or until rice is tender and liquid is absorbed. Remove from heat. Season to taste with salt and pepper, if desired. Sprinkle with almonds before serving.
