A wonderful little cheesecake for a dessert buffet. It is incredibly easy to make and looks and tastes very impressive. I saw Paula Deen make them on FoodTV and I couldn't wait to try them myself. Use canned pie filling, fresh fruit or use your imagination!

2 (8 ounce) packages cream cheese, softened
1 cup sugar
1 teaspoon pure vanilla extract
2 eggs
12 vanilla wafers
1 (21 ounce) can cherry pie filling (or whatever else suits your fancy) or 1 (21 ounce) can blueberry pie filling (or whatever else suits your fancy)

Steps:

  • Preheat oven to 350°F.
  • Place a paper cupcake liner in each cup (12 total) of muffin pan.
  • Beat cream cheese with electric mixer until fluffy. Add sugar and vanilla, beating well. Add eggs, one at a time, beating well after each.
  • Place a vanilla wafer FLAT side down, in each muffin cup. Spoon cream cheese mixture over wafers filling each to about 1/4 inch from top of paper.
  • Bake for 20 minutes.
  • Allow tarts to cool completely before filling. When you remove the tarts from the oven, they will be puffed up, but as they cool, the center will sink, creating the perfect well to fill with a couple of spoonfuls of your favorite filling.
  • Chill thoroughly before serving.

Cocoa powder (to garnish)
Pastry beads (as needed for tarts)
180g all-purpose flour
20g corn flour
80g caster sugar
? tsp salt
90g unsalted butter (from the fridge; diced)
1 egg
100ml milk
40g caster sugar
100g cream cheese
100g ricotta cheese
25g parmesan cheese
1 egg yolk
1 tsp vanilla extract

Steps:

  • To Prepare Sieve the plain flour and corn flour into a bowl with sugar and salt. Add the cold butter using your hands to mould it into the mixture if you do not have a food processor. The result should be a breadcrumb texture. Mix the egg in with the mixture. Wipe down your workspace and start kneading the mixture. Once it has been kneaded enough, shape the dough into a mixture and wrap with cling wrap. Place in the refrigerator for 25 mins. Preheat the oven to 180? while waiting for the dough. Flour your clean workspace and roll your refrigerated dough to a thickness of ½ cm thick. Cut out the shape for your tart tins and line them properly. Fork the bases of your tart. Line the tray with baking paper and put the pastry beads into your shells. Bake the pastry shells for 10-12 mins or until the edges have slightly browned. Let the shells cool on the wire rack. To Cook Combine the milk, sugar, cream cheese, ricotta cheese and Parmesan cheese in a saucepan at medium heat. Wait until the cheese has melted and the filling mixture is smooth in consistency. Remove from heat and let it cool down. Stir in the egg yolk and vanilla extract. Let the pan cool fully. Pour an appropriate amount of filling into the tart shells. Bake for 8-10 mins. Let them cool slightly before garnishing with cocoa powder. Serve while it is still hot.
