Cheese-Stuffed Pretzel Bites | Better Homes & Gardens image

Homemade pretzels are great, but when stuffed with cheese and pickled jalapeños they are next-level great! Serve 'em up at your next game day party for an appetizer recipe the crowd will go wild for.

1 cup milk, warmed (105° to 115°F)
1 tablespoon sugar
1 package active dry yeast
2?? - 2?½ cup all-purpose flour
2 tablespoons butter, softened
1 teaspoon salt
8 ounces cheddar cheese, cut into 48 pieces
1 12 ounce jar pickled jalapeño slices, drained
3 cups water
½ cup baking soda
1 egg yolk, lightly beaten
1 tablespoon water
Coarse salt
Mustard

Steps:

  • Pour milk into a large bowl; stir in sugar until dissolved. Sprinkle the yeast over the milk mixture. Let stand 5 minutes. Add 2 1/3 cups of the flour, butter and 1 teaspoon salt. Stir until combined. Turn out onto a floured surface. Knead for 5 to 7 minutes or until a soft dough forms, adding additional flour as needed (dough should remain a little sticky). Place dough in a lightly greased bowl, turning once to grease surface. Cover and let rise in a warm place until double in size (about 1 hour).
  • Preheat oven to 450°F. Grease two 15x10x1-inch baking sheets.
  • Punch dough down. Turn out onto a clean, dry work surface. Divide dough into 8 portions. Roll each to a 12-inch rope. Cut each rope into 6 portions. Flatten each portion to a 3-inch circle. Top each with a cheese piece and 1 to 2 jalapeño slices. Bring up edges of each circle around filling and pinch to seal and shape into a ball.
  • In a 2-quart saucepan heat 3 cups water to just steaming. Stir in baking soda (mixture will foam). Use a slotted spoon to lower pretzel balls, in batches, into the soda mixture for 10 seconds. Remove and place on paper towels to blot dry. Arrange 2 inches apart on prepared baking sheets.
  • In a small bowl combine the egg yolk and 1 tablespoon water. Brush pretzels balls with yolk mixture. Sprinkle with coarse salt. Bake for 8 minutes or until golden. Cool slightly; serve warm with mustard.

These pretzel bites would be a hit at any party, and you can get a head start by wrapping the dough around the cheese, arranging on a parchment-lined baking sheet, and refrigerating (covered) until you’re ready to bake them.

0.5 cup(s) Plain fat free Greek yogurt
6 stick(s) WW Light part-skim mozzarella string cheese each cut into 4 pieces
1 large egg(s) Egg(s) lightly beaten
1 tsp Sea salt coarse
2 Tbsp Mustard

Steps:

  • Preheat oven to 400°F. Line a large baking sheet with parchment paper.
  • Combine flour and yogurt in a medium bowl. Stir well with a wooden spoon until just combined and then keep mixing dough in bowl with your hands until smooth (about 2 minutes of kneading). Divide dough in half. Roll each half into a 12-inch-long rope; cut each rope into 12 (1-inch) pieces.
  • Flatten each dough piece into a thin circle. Arrange 1 cheese piece in center of each dough piece; wrap dough around cheese, pinching holes and seams to seal. Roll between palms to help fully enclose dough around cheese. Arrange on prepared baking sheet. Brush pretzel bites with egg and sprinkle with salt.
  • Bake at 400°F until golden brown, 20-22 minutes. Serve warm with mustard.
  • Serving size: 3 pretzel bites and ¾ tsp mustard

  • Put the flour into the bowl of a stand mixer and add the yeast, sugar and salt. Mix well then add the water and use the dough hook on a low speed to bring it all together. Once combined, turn the speed up and knead for 10 minutes on a medium setting until you have a smooth silky dough. Transfer the dough to an oiled bowl and cover with plastic wrap. Leave to rise for 1 hour or until doubled in size. Knock the dough back and divide into 20 even pieces. Keep the dough covered while you work with one piece at a time to shape it into a ball: pull the edges in on themselves and pinch together to make a neat ball shape. Then, push one cube of Castello Creamy Havarti into the dough ball where the seam is, and repeat pulling the edges over to make a neat ball shape. Leave to rest on a lightly oiled tray, seam side down, and covered with more plastic wrap while you repeat with the rest, then leave to proof for 20 minutes. Bring water to a rolling boil with the baking soda. Preheat your oven to 450F or as hot as it will go if it won’t reach 450F. Make the garlic butter: While the pretzels are baking, put the butter and garlic into a small saucepan and warm gently. Once the butter has melted, take it off the heat and stir through the finely chopped parsley. Brush melted garlic butter over the hot pretzels and serve immediately.
