CHEESE CROUTONS RECIPE: HOW TO MAKE IT - TASTE OF HOME
This old family recipe is very popular. We also use these croutons to top our favorite Italian Wedding Soup. Leftover croutons can be frozen and reheated in a 450° oven for 5 minutes or until heated through.—Anita DelSignore, North Fort Myers, Florida

- In a large bowl, beat eggs. In another bowl, combine the remaining ingredients; gradually add to eggs. Spread evenly into a parchment paper-lined 9-in. square baking pan., Bake at 350° for 25-30 minutes or until lightly browned. Cool for 10 minutes before removing from pan; cut into 1-in. cubes. Increase temperature to 450°. Place cubes on an ungreased baking sheet. Bake 10 minutes longer, turning once. Transfer to a wire rack to cool completely.

- In a small bowl, toss together the cheddar and Parmesan. Sprinkle the cheese mixture into a large, heavy nonstick skillet. Cook over medium-high heat 2 to 3 minutes or until the cheeses are melted and bubbly. Tip skillet to allow excess oil to collect in one place. Remove excess oil with a spoon. Carefully lift the large crouton from the pan with a spatula and drain on paper towels. Cool and crumble.

- In a large pot over medium heat, melt 1 tablespoon butter and 1 tablespoon oil; sauté garlic and onions for 3 to 4 minutes. Stir in pumpkin, broth, heavy cream, and honey and season with salt and pepper. Bring to a boil and simmer for 7 to 10 minutes. Turn off heat and melt remaining butter for a silky consistency, then cover with lid and keep warm. Preheat cast-iron skillet over medium-high heat. Spread each piece of bread with a thin layer of mayonnaise and place in skillet, mayonnaise-side down. Top with layers of gruyère and cover with remaining bread. Cook until golden brown, flipping as needed. Cover skillet to melt cheese. Transfer to a cutting board and cut each grilled cheese into 8 pieces. Divide soup into bowls, top with grilled cheese croutons, garnish with parsley and drizzle with olive oil. Serve immediately.
