when summer ends my soup cravings appear. this is a nice quick week night version from quick & tasty recipes

3 cups diced carrots
1 cup sliced celery
3 1/2 whole sliced scallions
4 cups diced red potatoes, peeled
1 can chicken broth (10 oz)
1/2 cup flour
2 cups milk
salt, pepper to taste
1 dash of fresh ground nutmeg
3/4 cup dry white wine
3/4 cup cheddar cheese, shredded
3/4 cup swiss cheese, shredded
cooking spray

Steps:

  • spray a dutch oven with cooking spray place over medium heat and add carrots, celery, scallions and saute until softened add potatoes and chicken broth bring to boil, cover and simmer for 25 minutes until potatoes are soft place flour in a bowl, add milk and blend with a whisk, add to pot season with salt, pepper, nutmeg add white wine cook for a minute to blend flavors.
  • remove from heat, add cheeses stirring to melt.

4 cups chicken broth
1?½ cups diced potatoes
1 cup diced celery
1 cup diced carrots
1 cup diced onion
? cup margarine
? cup all-purpose flour
3 cups milk
1 tablespoon soy sauce
1 pound processed cheese, cubed
2 cups chopped, cooked chicken meat

Steps:

  • In a large stock pot combine chicken broth, potatoes, celery, carrots and onion. Cover and bring to a slow boil for 15 minutes, or until the vegetables are tender.
  • In a medium sauce pan melt butter over low heat, add flour and stir until smooth. Let simmer for 1 minute and then increase temperature to medium. Stir mixture constantly, while gradually adding milk. Continue to stir until thick and bubbly.
  • Add flour mixture to vegetables. Add soy sauce and then gently stir in cheese. Continue to stir until cheese is completely melted.
  • Add chicken, heat through and enjoy.

  • In a large pot, melt butter over medium-high heat. Cook onions for a couple of minutes. Add bacon and cook for another minute or so, then add diced bell peppers and cook for a couple of minutes. Finally, add corn and cook for a minute. Sprinkle flour evenly over the top and stir to combine. Pour in broth and stir well. Allow this to thicken for 3 or 4 minutes, then reduce heat to low.   • In a saute pan brown the ground beef. Drain and set aside. In same saute pan saute onion in 1 tablespoon butter until tender. Add garlic, carrots, basil and parsley. Saute about 3 minutes. Garnish each serving with chopped fresh tomatoes and dill pickle slices.
