Super easy and healthy rice stick noodles stir fried with chicken, celery and a national chili sauce from China--Douchi chili sauce.

1 bunch of rice stick noodles around 200g
1 cup of shredded chicken ( , either breast or leg)
1 cup of celery
1 red pepper ( , cut into pieces)
2 cloves garlic ( , sliced)
1 green onion
pinch of salt
1/2 tablespoon light soy sauce
1/2 tablespoon Laoganma Dou-chi chili sauce ( , or other chili sauces)
1 tablespoon cooking oil
toasted sesame seeds (optional)
1/2 tablespoon light soy sauce
1/2 tablespoon oyster sauce
pinch of ground pepper
1 tablespoon cornstarch
1 tablespoon cooking wine

Steps:

  • Pre-soak the rice stick noodles with room temperature water for at least 2 hours. I usually soak them in previous night. If you are using dried rice stick noodles, soak them for around 10 minutes.
  • Marinate chicken meat with all the seasonings.
  • To cook the rice noodles
  • To stir fry the dish

Rice stick noodles: 250 g
Chicken thighs: 3-4 pieces
Cabbage: 1/4 cup
Carrots: 2-3 medium pcs
Button Mushroom chopped: 4-5 pieces
Onion chopped: 1 big
Green chilli: 2 pcs
Garlic chopped: 2-3 pieces
Shrimp: 1/4 cup
Soy sauce: 2-3 talepsoons
Hot sauce: 1 teaspoon
Tomato sauce: 2 teaspoons
Oyster sauce: 1 teaspoon
Pepper powder: 1 talepsoon
Green peas: 1/4 cup
Chicken broth
Green onion: garnishing

Steps:

  • Soak the noodles in water for about 30 minutes until soft. Drain and set aside. Boil shrimp with little water and set aside.
  • Boil chicken thighs with 4-5 cups water till cooked. Reserve chicken broth for cooking noodles.
  • Cut chicken into small pieces. Heat oil in a pan, add garlic and green chilli, fry for 2-3 minutes. Fry onion till the raw smell goes, add salt, cabbage, carrot and cook for 5 minutes.
  • Add chicken, shrimp, peas, button mushroom and pepper powder to this. Saute well, then add soy sauce, hot sauce, tomato sauce, oyster sauce.
  • Cover and cook for 4-5 minutes or till cooked and set aside. Add broth to another pan and transfer to stove, when its starts boiling, add noodles, cook till it become soft.
  • Reduce the flame to medium, add the prepared mix to this. Mix well with wooden spoon.
  • Add green onion, Serve hot.

For these noodles, boil some water. Put the noodles in a spider or w/e scoop you can dip in the water w/o losing the noodles. Place noodles in water for about 10 seconds until noodles are soft. Dump noodles into pho. The reason why you cook the noodles separately is b/c the starch will rinse into your pho soup broth, making it cloudy and gross.
