Combine dried camomile flowers with aromatic lavender and honey to make this wonderfully calming tea, perfect in the morning or for winding down in the evening

Yield Makes one 500-600ml pot (serves 1-2)

Number Of Ingredients 3

2 tsp dried camomile flowers
pinch dried lavender , optional
2 tsp runny honey

Steps:

  • Put the camomile and lavender into the teapot and fill up the pot with water that has boiled but been left to stand for 1 min.
  • Leave the flowers to infuse for 2-3 mins, stir in the honey then strain in to cups to serve.

4 cups boiling water
6 bags chamomile tea
2 teaspoons grated fresh ginger
4 slices lemon
2-4 teaspoons honey
2 sprigs rosemary, lightly bruised

Steps:

  • Stir boiling water, tea bags, ginger, lemon, honey and rosemary together in large heatproof bowl. Steep, stirring occasionally, for 20 minutes. Strain the liquid through a fine-mesh sieve, pressing on the tea bags to get as much liquid out as possible.
