A no-fuss barbecue chicken recipe in a classic BBQ sauce – simply marinade the chicken overnight and throw it on the BBQ.

Number Of Ingredients 10

6 chicken drumsticks, preferably free-range
6 chicken wings, preferably free-range
2 tbsp clear honey
3cm/1¼in piece fresh root ginger, peeled and grated
1 garlic clove, crushed
1½ tsp Chinese five spice
2 tsp soy sauce
3 tbsp orange marmalade
½ tsp grated orange zest
1 tbsp sesame oil

Steps:

  • Slash the chicken drumsticks three to four times each with a sharp knife and place in a non-metallic bowl with the chicken wings. Mix together all of the marinade ingredients and pour over the chicken. Leave to marinate for at least 2 hours, or overnight if you can, turning occasionally.
  • Once it has marinated, place the chicken on the barbecue over medium–hot coals and cook for about 20 minutes, brushing with any marinade left in the dish as it cooks. If it's colouring too quickly, move to a cooler part of the barbecue to cook more gently. It's important you cook the chicken all the way through.
  • To check it is cooked, pierce a drumstick with a skewer: if the juices are still pink, carry on cooking. Eat as soon as they're cool enough to handle, with the sticky sauce all around your mouth and fingers. Isn't that what barbecues are all about?
  • The chicken can also be cooked in the oven for perfect picnic food. Preheat the oven to 200C/180C Fan/Gas 6.
  • Transfer the chicken into a roasting tray with a couple of spoonfuls of marinade. Place in the oven for about 50 minutes, turning occasionally and basting with the marinade and juices until thoroughly sticky and golden, adding extra marinade to the tray if necessary. Once the chicken pieces are cooked, eat when fresh and hot, or leave to cool before packing up for a picnic or packed lunch.

    1. If barbecuing, light the grill now so the flames have died down and it’s ready when you’re ready to cook.
    2. Finely grate the orange zest into a shallow bowl. Crumble in the dried chilli. Add the paprika, mustard, honey, ketchup and a splash of olive oil.
    3. Season with a small pinch of salt and pepper and mix well. Spoon out a few tablespoons of the marinade and set it aside.
    4. Add the chicken breasts to the bowl with the remaining marinade. Turn them over in the marinade so they’re well coated, cover with clingfilm and leave to sit for 5 to 10 minutes or until the grill is ready.
    5. If using a griddle pan, put it over high heat now to get it screaming hot.
    6. Use tongs to transfer your chicken breasts onto the grill or griddle pan. For chicken breasts approximately 2cm thick, cook for about 5 minutes on each side, turning every minute and basting as you go, or until golden and cooked through.
    7. Spoon a little of the reserved sauce over each breast.

    2. Drizzle a little oil over the ribs, season with sea salt and black pepper and rub all over to coat.
    3. Make the marinade. Deseed and finely chop the chilli, peel and grate the ginger and garlic then place them all in a medium pan along with the apple juice, white wine vinegar, tomato ketchup, mustard, soy sauce and brown sugar.
    4. Whisk the ingredients together and place the pan over a medium heat. Stir until the sugar dissolves, then simmer for 10 to 15 minutes, or until the sauce has thickened.
    5. Put the ribs in a large roasting pan, brush with the marinade and cover with foil.
    6. Cook in the oven for 1 hour 15 minutes, or until the meat pulls away from the bone easily. Baste the ribs with the marinade after 30 minutes. After 1 hour of cooking time remove the foil, baste and cook, uncovered, for the final 15 minutes, basting halfway through.
    7. Once your barbecue is hot, transfer the ribs to it. Cook over a medium-low heat for 5 to 10 minutes.
    8. Transfer the ribs to a board and cut them up. Serve with handfuls of rocket and watercress, if you like.
