I posted a Fresh Strawberry and Almond Baked Brie that I sometimes make a different way...with apples and walnuts. This gave me inspiration to come up with this Bruschetta recipe. It is great in the fall for dinner parties and other occasions.

Number Of Ingredients 9

1 large white onion, thinly sliced
1 large baguette, cut into 1/2 inch slices
8 ounces brie cheese, rind removed
2 gala apples, cored and sliced into thin wedges
1/4 cup chopped walnuts, toasted
2 tablespoons rice wine vinegar
1 tablespoon dark brown sugar
2 tablespoons olive oil
salt

Steps:

  • Heat Olive Oil in a pan to medium high heat. Add Onions, seasoning with a pinch of salt. Cook until they begin to turn brown and caramelize. DO NOT BURN!
  • Add apples, vinegar, and brown sugar. Reduce heat to medium. Saute until apples are cooked through and vinegar/brown sugar are absorbed.
  • In the meantime, slice the brie into pieces that are similar in size to the baguette slices. Place one slice of cheese on each baguette slice. Broil for about 2-3 minutes, or until cheese melts and bread is crispy.
  • Top each baguette slice with a spoonful of the caramelized apple/onion mixture. Serve warm.
  • Idea! - This appetizer is great for a dinner party where pork is the main dish.

Italian bruschetta with duck and caramelized onions is one of my favorite snacks. It is a real gourmet snack, I bet that your friends will be satisfied. I really like bruschetta – sandwiches with baked bread. You can practically put everything on it – cheese, vegetables, meat and etc. It is one of the best snacks to surprise your friends or just enjoy with a glass of wine while talking to your old friend. For those who don’t like wine – eat these sandwiches with tea!

Number Of Ingredients 8

1 Italian bread
50g of Goat cheese
40g of Smoked duck fillet
1 Onion
1 tablespoon of Olive oil
pinch of Salt
1 teaspoon of Brown sugar
1 tablespoon of Dried cranberries

Steps:

  • Slice bread into thin slices and bake in an oven over medium heat until it becomes crispy. Cut the onion into thin strips. Heat oil in the frying pan, add onion strips, sprinkle some salt and cook for about 15 minutes on low heat. Do not forget to stir every few minutes to prevent the onion from burning. When onions become soft, add sugar, balsamic vinegar and mix everything well. Stir onions for 5 minutes on a low heat. Take the pan out of the fire and let the onion to cool off. Put some goat's cheese on baked bread, gracefully put smoked duck and place caramelized onions on the top. You can decorate everything with the last accent - dried cranberries. Eat it right away as you made it!
